Eating quality of lamb: differences between extreme breed x production system groups

There is anecdotal evidence that certain sheep breeds, reared in a particular way, produce unusual or characteristic tastes in cooked meat. Such effects could be linked to differences in meat fatty acid composition associated with the consumption of different diets. This study investigated eating quality and fat composition in 4 distinctively different breed x feeding system groups.Four groups of 20 ram lambs were obtained as follows: Pure Soays (SO) finished off grass in April from commercial breeders; Pure Welsh Mountain (WM) finished off upland grass in October from ADAS Pwllpeiran; Suffolk x Mules from Harper Adams College finished off concentrates (grains) (SC) in April; and Suffolk x mules from the same source finished off grass (SG) in May. The animals were transported to Langford where they were slaughtered in Bristol University's abattoir.

Ram lambs, cryptorchids, and wether lambs achieved approximately the same weight at weaning. The daily gain of ram lambs and cryptorchids in the feedlot averaged 0.04 kg per day more than that of wether lambs but this difference was not significant. The greater total gain of ram lambs and cryptorchids in feedlot resulted in heavier shipping weights (45.0 and 46.1 kg vs. 43.5 kg). No differences were found in carcass grades among the sex types. Fatty acid composition of fat from ram lambs, cryptorchids, and wethers did not differ significantly. There was no significant difference in growth rate or fatty acid content of fat between animals on a ration containing barley and one containing screenings.

It is well established that the fatty acid combustion of adipose issue in pigs (non-ruminants) may be manipulated by changes in the fatty acid profile of the diets. The objective of this program of work was to quantify the responses of adipose depots of finishing pigs to changes in the level and profile of dietary fatty acids and to relate these changes to the sensory quality of meat as determined by taste panel.

Seventy-two feeder pigs, with a mean weight of 24.6 kg, were randomly allotted in groups of three to four dietary treatments to determine the effect of feeding poultry offal hydrolysate (POH) on fatty acid composition and meat quality. The four dietary treatments were: 0% POH (control), 5% POH, 10% POH and 15% POH on a dry matter basis. At slaughter (96.8 kg), the right loins from 60 pigs were retained for fatty acid analysis and meat quality evaluation. The longissimus dorsi muscle was dissected from each loin; 200 g were stored in an atmosphere of nitrogen and frozen for fatty acid analysis and 500 g were frozen for meat quality evaluation. Fat was extracted and methylated for fatty acid analysis. Separation and identification of individual fatty acid methyl esters was performed using gas chromatography. Sensory meat evaluation (pork flavour, off-flavour, tenderness and juiciness) was performed by 10 trained panelists. Warner-Bratzler shear evaluation and free moisture analyses were performed. The fatty acids in pork appear to exhibit a sensitive response to changes in dietary fat. Linear trends for fatty acids in the pork were, for the most part, opposite to trends in the diets. Inclusion of POH resulted in an increase in the total polyunsaturates present in the pork. There was no effect (P > 0.05) due to dietary treatment on flavour, tenderness or juiciness of the pork. No significant differences were found among the Warner-Bratzler shear measurements or free moisture determinations. Changes in fatty acid profile of pork do not appear to affect eating quality when POH is included in the diet at levels of up to 15% DM. Key words: Poultry offal, pork, fatty acid, meat quality

Salinity stress is a limiting factor for the growth and yield quality of rapeseed. The potentiality of melatonin (MT; 0, 25, 50, and 100 µM) application as a seed priming agent in mediating K+/Na+ homeostasis and preventing the salinity stress mediated oxidative damage and photosynthetic inhibition was studied in two rapeseed cultivars. We found that 50 µM MT treatment imparted a very prominent impact on growth, metabolism of antioxidants, photosynthesis, osmolytes, secondary metabolites, yield, and fatty acids composition. Days required for appearance of first flower and 50% flowering were decreased by MT application. Exogenous MT treatment effectively decreased the oxidative damage by significantly declining the generation of superoxide and hydrogen peroxide under saline and non-saline conditions, as reflected in lowered lipid peroxidation, heightened membrane stability, and up-regulation of antioxidant enzymes (catalase, superoxide dismutase, and ascorbate peroxidase). Furthermore, MT application enhanced the chlorophyll content, photosynthetic rate, relative water content, K+/Na+ homeostasis, soluble sugars, and proline content. Moreover, MT application obviously improved the oil quality of rapeseed cultivars by reducing glucosinolates, saturated fatty acids (palmitic and arachidic acids), and enhancing unsaturated fatty acids (linolenic and oleic acids except erucic acid were reduced). Yield related-traits such as silique traits, seed yield per plant, 1000 seeds weight, seed oil content, and yield biomass traits were enhanced by MT application. The anatomical analysis of leaf and stem showed that stomatal and xylem vessels traits are associated with sodium chloride tolerance, yield, and seed fatty acid composition. These results suggest the supportive role of MT on the quality and quantity of rapeseed oil yield.

Natural pastures in Montenegro, together with natural meadows, are the most important forage source and comprise 95% of the used agricultural area (UAA). The aim of this study was to estimate the changes in grassland biomass, chemical and floristic composition and fatty acid composition in milk of cows grazed on Agrostis stolonifera semi-natural wet grassland in the Central region of Montenegro. Investigation was conducted during three phenological phases: early vegetative, optimal vegetative and full reproductive phase. The chemical composition of the grassland biomass was changed through the phenological phases. A significant increase during the experimental period in the content of dry matter and crude fibers and a decrease in crude protein content were determined. The pasture community consisted of 52 species, belonging to 19 families. The total amount of plant species classified as excellent, very good and good quality was 7.69%, while medium quality plants amounted to 13.46%, low quality plants to 19.23%, valueless plants to 34.62% and toxic plants to 25%. The total quality index was 4.166. The highest quality index of this community was in the second phenological phase, then in the third phase the lowest quality was in the first phenological phase. According to the floristic composition and biomass quality, this lowland pasture can be qualified as being of moderate to good quality. The content of milk fat, protein and solid non-fat (SNF) was increased from the first to the third vegetation phase, but the differences between the phases were not significant (p > 0.05). The content of a majority of saturated fatty acids (SFAs) also increased, while the total content of monounsaturated fatty acids (MUFAs) was high in the second phase and decreased significantly in the third phase. The content of polyunsaturated fatty acids (PUFAs) was constant in the first two phases, while it significantly decreased in the third phase. The highest content of most of MUFAs and PUFAs was obtained in the second phenological phase. The content of fatty acids in the third phase significantly affected (p < 0.05) by the phenological phase. This research contributes to the improvements in the grazing management of wet grasslands as well as the animal performances (milk yield and quality of milk).
