Texture is a prominent feature in foods and consequently can be the reason a food is accepted or rejected. However, other sensory attributes, such as flavor/taste, aroma, sound and appearance may also lead to the rejection of food and motivations other than unpleasantness exist in unacceptance. To date, these motivations for food rejection have been studied in isolation and their relationships with psychological factors have not been tested. This study measured reasons people reject a food and probed into the specifics of texture rejection. A large U.S. sample (N=473) was asked to rate their motivations for rejecting a food, list foods that were disliked due to unpleasant sensory attributes, specify the unpleasant sensory attribute(s), and complete an assessment of general touch sensitivity. Results showed 94% of individuals reject a food due to its texture, a rate comparable to flavor-based rejection. Looking at the number of foods being rejected, flavor was the most common food attribute, followed by texture and then aroma. From a linguistic standpoint, aversive textures encompass a large vocabulary, larger than liked textures, and the same food may be rejected due to a single or combination of texture terms. Viscosity (e.g. slimy) and hardness (e.g. mushy) are the most common aversive texture types, but through cluster analysis subsets of individuals were identified that are more aversive to other textures. This study emphasizes the role of aversive textures in food rejection and provides many avenues for future investigations.

Abstract Older adults with subjective memory complaints (SMCs) are at increased risk for episodic memory decline. Episodic memory decline is an important predictor of objective memory impairment (one of the earliest symptoms of Alzheimer’s disease) and an often-suggested criterion of successful memory aging. Therefore, it is important to explore the determinant factors that influence episodic memory in older adults with SMCs. Roy adaptation model and preliminary evidence suggest that older adults with SMCs undergo a coping and adaptation process, a process influenced by many health-related risks and protective factors. This study aimed to explore the relationship between coping capacity and episodic memory, and the mediating role of healthy lifestyle between coping capacity and episodic memory in a sample of 309 community-dwelling older adults with SMCs. Results from the structural equation modeling showed that coping capacity directly affects episodic memory (r=0.629, p<0.001), and there is a partial mediating effect (60.5%) of healthy lifestyle among this sample of older adults with SMCs. This study demonstrates that coping capacity and adaptation positively correlate with episodic memory in older adults with SMCs, and that these correlations are mediated by healthy lifestyle. The results suggest that older adults with poor coping capacity should be assessed and monitored regularly, and clear lifestyle-related interventions initiated by healthcare providers that promote healthy lifestyles may effectively improve coping capacity and episodic memory in this population group. Memory is considered to be a flexible and reconstructive system. However, there is little experimental evidence demonstrating how associations are falsely constructed in memory, and even less is known about the role of the self in memory construction. We investigated whether false associations involving non-presented stimuli can be constructed in episodic memory and whether the self plays a role in such memory construction. In two experiments, we paired participants’ own names (i.e., self-reference) or the name “Adele” (i.e., other-reference) with words and pictures from Deese/Roediger–McDermott (DRM) lists. We found that (1) participants not only falsely remembered the non-presented lure words and pictures as having been presented, but also misremembered that they were paired with their own name or “Adele,” depending on the referenced person of related DRM lists; and (2) there were more critical lure–self associations constructed in the self-reference condition than critical lure–other associations in the other-reference condition for word but not for picture stimuli. These results suggest a self-enhanced constructive effect that might be driven by both relational and item-specific processing. Our results support the spreading-activation account for constructive episodic memory.

32 4– and 5–yr.-olds participated in a series of performed and imagined actions and a memory interview. Children in the Picture condition answered questions accompanied by pictures of actions whereas children in the Verbal condition received only the verbal cues. Children in the Picture condition performed as well as children in the Verbal condition when classifying performed and new actions but had more difficulty classifying imagined actions. Results suggest that retrieval cues (pictures) did not enhance children's discrimination of self-performed and self-imagined actions.
