This study reveals that fossil shungite samples exhibit antioxidant activity, can reduce oxidized components, and bind to free radicals. A sample of Sh20 (size fraction—20 μm) (1.30 mg equivalents of ascorbic acid/g of shungite; 3.46 mg equivalents of trolox/g of shungite; 0.99 mg equivalents of quercetin/g of shungite) had the maximal activity according to the amperometric method. The obtained data indicate that shungite has antioxidant properties, but these are approximately 1000 times less pronounced than those of quercetin. A ShT20 sample (size fraction—20 μm + heat treatment) was found to have the highest antioxidant activity against the 2,2-diphenyl-1-picrylhydrazyl radical and cytotoxicity. Further studies, including the optimization of the antioxidant extraction conditions of shungite, and the analysis of the qualitative and quantitative composition of the obtained extracts, are required for a more accurate interpretation of the results. Shungite can be applied as an alternative to activated carbon in water purification, due to its absorption, catalytic, antioxidant, regenerating, and antibacterial properties, as well as its high environmental safety and relatively low cost. It is possible to identify new structural forms of carbon within, and other valuable properties of, shungite substance, which will make it possible to create effective technologies for the practical use of shungite rocks, particularly in the production of fullerenes and other carbon nanoclusters.

Plant extracts rich in polyphenols can be used in the food industry as natural preservatives, extending the shelf life of prepared and semi-finished foods without chemical preservatives. In this paper, we investigate the polyphenolic composition, antioxidant activity and antibacterial properties of herbal extracts as part of food systems. The research objects were knot grass (Polýgonum aviculáre), marjoram (Oríganum), bur beggar-ticks (Bídenstripartíta), thyme (Thymus), whortleberry leaves (Vaccínium ida vítis), calendula (Calendula), sage (Salvia), chamomile flowers (Matricāriachamomīlla), eucalyptus (Eucalýptus) and bearberry (Arctostáphylosúva-úrsi). We determined the total content of phenolic compounds and flavonoids; the antioxidant activity by DPPH and FRAP methods; variations in the bacterial сontamination of animal raw materials over total bacterial count (TBC), coliform bacteria, yeast/fungi, salmonella and staphylococcus. Extracts of sage (1138±57 mg GA/100 g and 537±25 mg C/100 g), eucalyptus (1073±49 mg GA/100 g and 412±20 mg C/100 g), chamomile flowers (1002±36 mg GA/100 g and 493±22 mg C/100 g) and marjoram (1015±42 mg GA/100 g and 458±21 mg C/100 g) contain the largest amount of biologically active substances (phenols and flavonoids, respectively). Sage, eucalyptus and chamomile extracts demonstrate the highest antioxidant activity among the studied samples. Most of the studied extracts exhibit little or no effect on the organoleptic properties of finished products. In addition, chamomile flower, sage and eucalyptus extracts suppress the growth of pathogenic microorganisms in foods under experimental conditions. The microflora growth is significantly reduced when treating animal raw materials with calendula flowers, marjoram and thyme extracts. Extracts of sage, chamomile flowers, calendula flowers, marjoram and thyme can be recommended as components of food raw materials.

At the present stage, the tasks of state policy is to preserve the functions of life support for the stable development of society, improving the health of the population, ensuring environmental safety of the country. Antioxidant activity is manifested in the ability of substances to delay the radical oxidation of organic and high-molecular compounds, and thereby reduce the yield of alcohols, hydroperoxides, fatty acids, aldehydes and ketones. Pectin substances are contained in all plants and some algae and are able to exhibit antioxidant activity. The article presents the study of antioxidant activity of pectin-containing solutions. To determine the antioxidant activity, aqueous solutions of pectin substances of Apple, citrus, beet pectin, their combinations with a concentration of 1% were prepared. According to the obtained data, the value of antioxidants for aqueous solutions of pectin substances and their combinations was calculated. According to the diagram of antioxidant activity of aqueous solutions of pectin substances and their combinations. An increase in antioxidant activity in the combination of Apple and citrus pectins with beet, which is explained by the influence of beet pectin on the properties of substances combined with it. Apple pectin does not increase antioxidant activity in combination with citrus pectin, due to its chemical and physiological form. The ability of pectins to show antioxidant activity depending on the combination of pectins is proved. It was found that the most antioxidant activity has an aqueous solution of beet pectin. Moreover, there is an increase in antioxidant activity when combining Apple and citrus pectins with beet, which is explained by the predominant effect of beet pectin on this indicator.

The antioxidant properties of fruits, flowers, leaves, bark (or stem) of elderberry (Sambucus nigra L.), red elderberry (Sambucus racemosa L.) and dwarf elder (Sambucus ebulus L.) were investigated. The total content of anthocyanins and total phenolic compounds content by using of Folin-Ciocalteu assay were determined spectrophotometrically. The total content of water-soluble antioxidants was investigated by amperometric method. The antioxidant activity (AOA) of plant extracts was measured using DPPH (1,1-diphenyl-2-picrylhydrazyl) radical, ABTS (2,2’azinobis(3)ethylbenzthiazoline-6- sulfonic acid) radical and FRAP (ferric reducing antioxidant power) assays. It was established that the fruits of plants of the genus Sambucus L. were characterized by the maximum level of all studied antioxidants. High content of anthocyanins and phenolic compounds was determined in the leaves of elderberry and dwarf elder. The flowers of these elderberry species were distinguished by a high total content of water-soluble antioxidants. The highest antioxidant activity was observed in fruits extracts in comparison with other parts of the plant. Higher antioxidant activity was identified in the extract of the fruits of elderberry and dwarf elder than of the red elderberry fruits. The most optimal method for evaluating the antioxidant activity of elder extracts was the FRAP assay, which showed the highest correlation between AOA and individual antioxidant components, compared to DPPH and ABTS assays. Comparative analysis of antioxidant content and antioxidant activity of various plant parts of three elderberry species showed that the most promising sources of biologically active substances with antioxidant properties are fruits and flowers of elderberry and dwarf elder.

Aim: To evaluate the antibacterial efficacy, the presence of different phytoconstituents of the leaf extracts of Indian plant Celastrus paniculatus against 6 antibiotic-resistant bacteria along with the evaluation of their antioxidant potentiality. Methods: The leaf extracts were prepared using 4 solvents, water, methanol, n-butanol, and acetone. The antibacterial property was evaluated using agar well diffusion and micro-broth dilution method. Qualitative phytochemical analysis was performed using standard protocols for each solvent extract to check for the presence of the secondary metabolites and phytochemicals which attributes to the antibacterial effectivity of C. paniculatus. Further, the antioxidant potentiality of all the 4 leaf-solvent-extracts was estimated using the DPPH method. Results: The n-butanol leaf extract exhibited the highest antibacterial and antioxidant activity, followed by acetone, methanol extracts. The aqueous extracts exhibited negligible antibacterial activity. Conclusion: This study validated the antibacterial properties of C. paniculatus leaf extracts against both gram-positive and negative bacteria and the phytochemical analysis revealed the presence of many secondary importance which can be attributed to its therapeutic properties. Hence, this plant can be further used as a complementary or alternative choice of drug for combatting multidrug-resistant bacterial pathogens. The antioxidant activity of teas depends on the type and quality of the ingredients used in the process of tea production, location of the crops, and manner of the raw material processing. Our study is the first to compare the antioxidant and antiglycation properties of seventeen fruit teas obtained from one manufacturer. We evaluated three different brewing times (3, 5, and 10 min) and two brewing temperatures (70 and 100 °C). We demonstrated that infusions with the longest brewing time reveal the highest antiradical activity, while increased brewing temperature does not significantly affect the assessed parameters. The best antioxidant properties were obtained for the teas made from lemon balm with pear, forest fruits, cranberry with pomegranate, raspberry, and raspberry with linden. Fruit teas owe their high antioxidant activity to the presence of polyphenolic compounds in infusions. Extracts from fruit teas also diminish the oxidation and glycation of albumin in vitro, observed as a decrease in the fluorescence of aromatic amino acids and advanced glycation (AGE) and oxidation (AOPP) protein products levels. In conclusion, in order to prepare fruit teas with the best antioxidant properties, a longer extraction time is needed. The health-promoting properties of dried fruit infusions can be modified by changing the qualitative and quantitative composition of the ingredients.

Objective: Anthocyanins are the water-soluble pigments most commonly present in flowers, fruits, and vegetables. Anthocyanins have been reported for is antioxidant, anti-inflammatory, antibacterial properties and other health benefits in human. This study was performed to extract and determine the anthocyanin and to access the antioxidant properties of the most commonly used fruits, vegetables and flowers in Thailand.Methods: Extraction of anthocyanin and its aglycones from the selected samples and determination of anthocyanin and anthocyanidins using reversed-phase HPLC analysis. Determination of total antioxidant ability using ABTS, DPPH and FRAP assay.Results: Maximum distribution of tested anthocyanin and anthocyanidin contents was observed in the extracts of Jambolan plum, Ceylon Spinach, Purple Sweet Potato, Purple Lettuce followed by common plum and Red dragon fruit. The extracts of Ma-Kiang, Purple Eggplant, Red Grape, and Purple Lettuce showed the maximum amount of cyanidin 3-glucoside, delphinidin 3-glucoside, peonidin 3-glucoside, and malvidin 3-glucoside, respectively. Likewise, the maximum concentration of cyanidin, delphinidin, peonidin, and malvidin were found in Common plum, Red Khae, Red Cabbage, and Purple Lettuce, respectively. Ma-Kiang extract exhibited the maximum antioxidant activity followed by Red Cabbage, Common Plum, and Purple Eggplant extract compared to the other extracts.Conclusion: The present study, primarily profiled the anthocyanin content of selected fruits, vegetables, and flowers. Among the tested samples, Ma-Kiang extract showed the high cyanidin 3-glucoside content and antioxidant activity. Further, detailed study on the content of anthocyanins at different climate and geographical conditions and other factors are necessary to develop nutraceutical or cosmetic product with a functional ingredient.Keywords: Anthocyanin, Anthocyanidin, Antioxidant activity.


Understanding the role of antioxidants as substances interrupting free radical reactions intensifies the search for new natural and synthetic substances with antioxidant properties. Along with this, intensive research is underway to create methods for assessing the antioxidant (AO) properties of various substances and devices for determining antioxidant activity (AOA). This article proposes an amperometric method and a sensor for measuring the total antioxidant activity of substances. The method is based on the process of oxygen electroreduction in the absence and presence of antioxidants of various origins in the solution. The measurement of the analytical signal before and after the introduction of the antioxidant substance into the electrochemical cell is carried out using a portable two-electrode sensor, "pencil" type, with a silver cathode, on which a potential of -500 mV is applied from a DC source (batteries). As an antioxidant standard, a 1% solution of ascorbic acid in a phosphate buffer with a pH of 6.86 was conventionally adopted. The sensor is connected to the measuring and driving device through a microcircuit - an operational amplifier. The measured signal in arbitrary units is displayed on the liquid crystal screen of the setting and measuring device and characterizes the maximum depolarization current of the indicator electrode. Using the resistors of the measuring device, a range of 0 - 100 units is set, for the analyte in the absence of an antioxidant and in the presence of a standard - 1% ascorbic acid solution, conventionally taken as 100%, respectively. Thus, the antioxidant activity of substances can be measured as a percentage relative to ascorbic acid (or other antioxidant). The results of determining the total antioxidant activity of some drinks and aqueous-alcoholic extracts of medicinal plants are presented.

Sorghum syrup has a saturated carbohydrate composition, which includes cellobiose, maltose, mannose, rhamnose, ribose, fructose, glucose, and sucrose. The present research featured the physicochemical properties of sugar sorghum syrup, i.e. average molecular weight, density, solubility in water, and melting point, and its prospective use in the production of soft ice cream. The carbohydrate composition of sugar sorghum syrup was defined by the method of normal-phase high-performance liquid chromatography. The antioxidant activity of sorghum syrup was determined using the amperometric method. The study of its physicochemical properties proved that it can be used in soft ice cream technology. The sweetness coefficient was determined in comparison with sugar solution and by a taste panel. With an average number of panelists equal to 5, the value of equivalent sweetness was 1.5. This sweetness of sorghum syrup was equivalent to the sweetness of the sucrose solution with minimal concentration. The assessment of the antioxidant activity of sorghum syrup indicated the possibility of its use in functional products with antioxidant properties. The paper introduces a recipe for soft ice cream: cream (20% of fat), milk (3.2% of fat), skimmed milk powder, sorghum syrup, stabilizer ‘Cremodan® SE 334 VEG’, Citri-Fi dietary fiber. The overrun was studied by the method of determining the volume fraction of air; the acidity was determined by the titrimetric method. The resistance to melting was assessed using a cylindrical sample with a diameter of 35 mm and a height of 5 cm. The sample was thermostated at 25 ± 1°C, while the sample area was fixed at regular intervals. The overrun of soft ice cream was 85%, the resistance to melting equaled 20 minutes. Soft ice cream is a popular product among all groups of the population and is widespread in cafes, restaurants, and health-resorts.

In the last decade the attitude of socially active people to their own health has changed significantly. The desire to lead a healthy lifestyle forms consumers’ demand for proper balanced nutrition, products enriched with natural biologically active substances of unconventional plant materials, systematic consumption of which can not only reduce the risk of alimentary diseases, but also protect a person from oxidative stress, which is the predecessor of many serious illnesses. Among the wide range of chemical compounds that make up plant materials, a special place is occupied by compounds of antioxidant action, such as flavonoids, phenol carboxylic acids, vitamins C and E. The aim of the research was to study the qualitative composition and quantitative content of natural antioxidants in some types of medicinal and technical plant materials of the Republic of Adygea to determine the possibility of their use in the production of functional food products. The content of biologically active compounds that determine the antioxidant properties of plant materials was determined using «Kapel 105 «M» capillary electrophoresis system and JASCO 875-UV liquid chromatograph. Antioxidant activity was measured by the amperometric method with Tsvet Yauza-01-AA analyzer. According to the results of the research, it has been found that Echinacea purpurea herb (1,09 g / dm3) and walnut leaves (0,96 g / dm3) exhibit a high antioxidant activity (in terms of gallic acid), which is due to the high concentration of natural antioxidants of the phenolic type. Due to these properties this plant raw materials can be used as enriching ingredients for the production of various groups of food products for functional purposes.

Objective: To study the effect of storage temperatures and dehydration conditions (solar and convective drying; SD, CD), on the quality, physicochemical parameters and antioxidant properties of tomato fruits. Methodology: The physicochemical characteristics pH, titratable acidity, soluble solids (°Bx) and color parameters (L*, a* and b*), were evaluated. The lycopene, carotenoids and antioxidant activity percentages retention of tomatoes fruits stored at 7 and 22 ° C for 5 days and subjected to SD (Temperature (T) of 67 °C and luminescence of 685 lum/sqf) and CD (T 70 °C, flow rates 0.5, 1.0 and 1.5 m/s), were analyzed. Results: The fruits reached humidities of 17 and 15% for SD and CD. The parameters pH, °Bx, L*, a*, b* were highest with 22°C and CD (1.5 m/s). The value of the carotenoids was higher in fruits stored at 7 ° C and subjected to CD (1.0 and 1.5 m/s) and SD with values of 83.85, 85.98 and 99.43%, respectively. The CD (0.5 m/s) and SD improved lycopene (94.37 and 95.14%) and the antioxidant activity with values of 73.06 and 97.21%. Implications: The application of solar dehydration depends on luminescence condition; however, it is inexpensive and environmentally friendly alternative. Conclusions: The results derived in a viable alternative for the conservation and commercialization of tomato fruits in rural communities
