"The magic of manna in the folk culture of Maramureş Based on our direct field research, we have dedicated this study to a very rich chapter of magic, that of manna (abundance), as it appears in the folk culture of Maramureş. In the first part we analyzed the concept of the manna in the Romanian and the universal folk culture, but also the categories of rites through which the magic of the abundance is performed. We reserved the investigation part to the rites of defense, conservation and magical stimulation of the fields production. In this chapter we have focused on the rites that are practiced at certain times considered by people to be critical : the beginning of ploughing and sewing. We have reserved due space to the study of the rites related to the abundance of the fields in the spring customs, which represent a large category, then in the rites within the winter customs. A large of our research was dedicated to the rites related to the defense and magical stimulation of animal products abundance. In this chapter too, we focused on the rites dedicated to critical moments: taking out the sheep, climbing the sheep in the mountains, the first milking. In our research, we have dealt extensively with the categories of rites related to the defense and stimulation of cow milk production. A chapter of our study approaches the magical practices of stimulating tree fruits abundance, some preserved in traditional customs such as the threat to the barren tree. In this chapter we analyzed reminiscences of the stimulation of the manna of the trees in the old carols, such as ""White apple flowers"". Another chapter of our research is dedicated to the rites of stimulating the abundance of poultry products. A complex chapter is devoted to the rites of taking away the manna of milking animals. I have reserved an equally extensive chapter to the rites of getting back the manna of milking animals, at the end of the research. Keywords: manna, rite, animal, custom, tree "

AbstrakKebutuhan akan susu semakin meningkat seiring dengan perkembangan jumlah penduduk, tingkat pendapatan, dan selera masyarakat. Dengan semakin meningkatnya kebutuhan akan susu, permintaan akan populasi sapi perah pun akan meningkat pula. Konsumsi produk hewani berkontribusi lebih dari seperempat water footprint manusia. Air yang dibutuhkan untuk menghasilkan pakan merupakan faktor utama di balik water footprint produk hewani Penelitian ini bertujuan untuk mengetahui besaran water footprint dalam produksi susu sapi serta untuk merumuskan upaya-upaya yang bisa dilakukan untuk mengurangi besarnya water footprint produksi susu sapi. Penelitian ini menggunakan desain penelitian kuantitatif dominant kualitatif. Data dikumpulkan melalui observasi, pengukuran langsung dan wawancara semi-terstruktur pada setiap tahap budidaya. Hasil penelitian menunjukkan bahwa, nilai water footprint  produksi susu sapi adalah 606,88 m3/ton, dengan nilai masing-masing komponennya adalah 233,0 m3/ton untuk green water, 178,1 m3/ton untuk blue water serta 195,78 m3/ton untuk grey water. Upaya-upaya yang dapat dilakukan untuk mengurangi water footprint produksi susu sapi : dengan meningkatkan produktivitas air pada tahap budidaya rumput gajah serta melakukan pengolahan limbah dan menerapkan  metode livestock integrated farming pada tahap budidaya ternak sapi perah.Kata Kunci : Water footprint, produksi susu sapi, upaya-upaya untuk mengurangi water footprintAbstractThe need for milk is increasing in line with population growth, income levels, and public taste. With the increasing demand for milk, dairy cow population demand will increase as well. Consumption of animal products contribute more than a quarter of the human water footprint. Water needed to produce food is a major factor behind the water footprint of animal products This study aims to determine the amount of water footprint in cow milk production as well as to formulate measures that can be done to reduce the amount of water footprint of milk production of cows. This study uses a quantitative dominant qualitative research design. Data were collected through observation, direct measurement  and semi-structured interviews at each stage of cultivation. The results showed that, the value of milk production water footprint is 606.88 m3/ton, with the value of each component is 233,0 m3/ton for green water, 178,1 m3/ton  for blue water and 195.78 m3/ton for grey water. Efforts that can be done to reduce the water footprint of milk production : increasing the productivity of water at the stage of elephant grass cultivation and doing the waste water treatment and apply livestock integrated farming method in dairy cattle farming stage.Keywords: Water footprint, milk production, efforts to reduce the water footprint

The article provides an overview of a field study conducted among Czechs in Serbia, Romania, Bosnia and Herzegovina in 2019. The first results are presented, samples of transcribed texts are given. The purpose of the expedition was to collect narratives for the proper linguistic study of contact elements, conversations were conducted, among other things, about the history of the resettlement of Czechs to the Balkans, about folk culture, and interaction with other Slavic and non-Slavic ethnic groups. In the three regions studied, the Czech language remains unevenly due to a number of linguistic and extralinguistic factors. There are very few Czechs left in Bosnia and Herzegovina; Czech is the mother tongue only for elder people living in rural areas. In Serbia, there are several schools where Czech language and culture are taught, and in Romania there are schools where in the primary grades all subjects are taught in Czech. The collected language data is a valuable source for studying local Czech dialects and contact phenomena (borrowings, code-switching). The metalinguistic comments used by informants when they have difficulties in their Czech language during a conversation with a researcher are of particular interest to sociolinguistics.

This paper aimed to evaluate the changes in the thermal stability of goat milk, cow milk and homogenized milk under different pH conditions. The results showed that goat milk was of type B milk, and the thermal stability were positively correlated with the pH value. But cow milk was of type A milk, the most stable pH of fresh milk was 6.9, while it was 6.7 for homogenized cow milk. Compared with cow milk, the acidification of goat milk was stronger due to heat. Therefore, in the process of milk production, the germicidal heating conditions of two different milk sources should be determined according to their thermal stability.

The environment, including animals and animal products, is colonized by bacterial species that are typical and specific of every different ecological niche. Natural and human-related ecological pressure promotes the selection and expression of genes related to antimicrobial resistance (AMR). These genes might be present in a bacterial consortium but might not necessarily be expressed. Their expression could be induced by the presence of antimicrobial compounds that could originate from a given ecological niche or from human activity. In this work, we applied (meta)proteomics analysis of bacterial compartment of raw milk in order to obtain a method that provides a measurement of circulating AMR involved proteins and gathers information about the whole bacterial composition. Results from milk analysis revealed the presence of 29 proteins/proteoforms linked to AMR. The detection of mainly β-lactamases suggests the possibility of using the milk microbiome as a bioindicator for the investigation of AMR. Moreover, it was possible to achieve a culture-free qualitative and functional analysis of raw milk bacterial consortia.

The selenium content of Canadian grains, wheat by-products, plant and animal protein supplements and mineral supplements has been determined by chemical analyses. Grains of prairie province origin contained five to ten times as much Se as those of Ontario and Quebec. Corn, oat, barley and wheat grain from the latter central provinces had low and comparable levels of Se; western durum wheat had a high level. Plant products varied widely in their Se content, soybean meal being low (0.14 ppm), rapeseed and linseed meals high (ca. 1.00 ppm). Among animal products, milk by-products contained the least amounts (ca. 0.15 ppm) and fishery products the most (ca. 2.00 ppm). Meat and poultry products had intermediate amounts. Calcium phosphate (0.65 ppm) contained 15 times as much Se as calcium carbonate.

Release of oxytocin (OT) is essential for milk ejection in dairy cows (Lefcourt & Akers, 1983; Bruckmaier & Blum, 1998). During milk ejection, alveolar milk is shifted into the cistern, which causes an increase of intracisternal pressure (Bruckmaier et al. 1994). To initiate maximum milk ejection at the start of milking, increasing OT concentration beyond a threshold level is sufficient (Schams et al. 1983). Increasing OT concentration beyond this threshold has no additional effect on intracisternal pressure, i.e., milk ejection (Bruckmaier et al. 1994). Stimulatory effects of milking by hand or by machine or by suckling are well documented (Gorewit et al. 1992; Bar-Peled et al. 1995; Tancin et al. 1995; Bruckmaier & Blum, 1996). At the start of milking, stimulatory effects of machine milking without pre-stimulation or with a manual pre-stimulation and subsequent machine milking cause the release of comparable amounts of OT (Gorewit & Gassman, 1985; Mayer et al. 1985; Bruckmaier & Blum, 1996), whereas the timing of the applied pre-stimulation is important for the shape of the milk flow curve. Should the pre-stimulation period be too short, or absent altogether, the start of the main milk flow is delayed resulting in a bimodal milk flow profile (Bruckmaier & Blum, 1996). Furthermore, the stimulation of only one teat causes an OT release similar to that caused by stimulation of all four teats (Bruckmaier et al. 2001). However, milk production is greater for hand milking or suckling than for machine milking, possibly owing to higher OT concentrations (Gorewit et al. 1992; Bar-Peled et al. 1995).

A 2-year evaluation of perennial ryegrass (Lolium perenne) infected with wild endophyte (Neotyphodium lolii), AR1 endophyte or no endophyte was carried out in Hamilton, New Zealand. In contrast to wild endophyte-infected ryegrass, AR1-infected ryegrass does not produce the alkaloids lolitrem B or ergovaline. Annual pasture production was similar across endophyte treatments, averaging 18.3 t DM/ha in year 1 and 13.8 t DM/ha in year 2, and ryegrass tiller density and botanical composition were unaffected by endophyte status. A combined analysis of 3 short-term milk production tests in late spring (Nov. 1999), summer (Jan. 2000) and autumn (Mar. 2000) in the first experiment, showed a 6.7% advantage in milk production to cows grazing AR1-infected ryegrass compared with those grazing wild endophyte-infected ryegrass pastures (P<0.05). Milk composition was similar in all test periods and ryegrass staggers was not observed on any treatment. In a second experiment, weaned dairy calves were continuously stocked on the pastures described above from late spring 2000 to autumn 2001 and grazed to a mean sward height of 5 cm. Average calf liveweight gain and total liveweight gain per hectare were similar across treatments over the 5-month period, averaging 0.8 kg/calf.day and 822 kg/ha, respectively. Calves grazing wild endophyte-infected ryegrass developed mild ryegrass staggers in January and February, coinciding with a peak lolitrem B concentration in this experiment of 2.3 mg/kg DM, while those grazing AR1-infected or endophyte-free ryegrass pastures did not develop staggers. Information is also presented on herbage and alkaloid intake, blood plasma prolactin concentration, and cow temperature and respiration rate. Results from this initial evaluation under dairying indicate that AR1-infected ryegrass can produce similar pasture yields as wild endophyte-infected ryegrass, while offering small improvements in milk yield with no incidence of ryegrass staggers in grazing animals.
