The objective of this study was to evaluate carcass and meat quality in growing-finishing pigs fed diets with different vegetable protein sources. It was found that partial (50% in grower diets) and complete (100% in finisher diets) replacement of protein from genetically modified soybean meal (GM-SBM) with protein from 00-rapeseed meal (00-RSM), alone or in combination with protein from faba bean seeds (FB) cv. ‘Albus’, yellow lupine seeds (YL) cv. ‘Taper’ or corn DDGS, had no significant effect on carcass quality characteristics or the chemical composition of meat. In all groups, meat samples were characterized by color typical of pork, high water-holding capacity and low pH values. A sensory analysis of the eating quality attributes of meat revealed that they were highly satisfactory; only aroma intensity was affected by the experimental factor. The study demonstrated that growing-finishing pigs can be fed complete diets containing the analyzed vegetable protein sources alternative to GM-SBM without compromising carcass or meat quality.

This study aimed to explain the possibility of partial replacement of genetically-modified soybean meal (SBM GM) with pea seeds and rapeseed meal (RSM) in complete feed mixtures for growing-finishing pigs and to determine its impact on meat quality and health-promoting indices. The pigs (n = 50) were randomly divided into five groups, 10 animals each (gilts and barrows, 1:1, 3-breed: ♀ (landrace × yorkshire) × ♂ duroc), including the control group (C) and four experimental groups (E1, E2, E3, E4), and fed complete feed mixtures. The SBM GM was the only protein source in feed mixtures for control pigs. In feed mixtures for E1–E4 groups, it was partially replaced with pea seed doses of 5.0%, 10.0%, 15.0%, and 17.5% in groups E1, E2, E3, and E4, respectively. The feed mixtures were iso-energetic and iso-protein. After completed fattening, the animals were slaughtered. M. longissimus lumborum was sampled for analyses of the chemical and physical traits. The fatty acid profile determined in intramuscular fat (IMF) was used to compute the values of the health-promoting indices. The chemical and physical characteristics of meat were comparable in all groups. The study showed a dietetically-beneficial decrease in the values of atherogenicity index (AI), thrombogenicity index (TI), and saturation (S/P) in the meat of the experimental pigs vs. control group. The values of most of the analyzed quality attributes of pork justify using alternative protein sources as partial SBM GM replacers in diets for growing-finishing pigs in sustainable animal production.

The study aimed to examine the growth performance and meat quality of Pekin ducks fed diets consisting of various protein source alternatives (groups: II—yellow lupin (YL) and rapeseed meal (RSM); III—YL and narrow-leaved lupin (NLL); IV—pea and YL; V—RSM, YL, NLL and pea) to (I) soybean meal (SBM) and RSM. Four hundred and twenty ducks were assigned to five groups with six replicates (14 birds per group). After 7 weeks, 10 ducks from each group were slaughtered. Breast muscles were analyzed for water-holding capacity, drip loss, color, and elasticity. Productivity parameters did not differ between groups I and II but were lower in V. The weight of carcass, neck with skin, skin with subcutaneous fat and total fat were highest in group II. The proportion of wings was higher in group V. In group II, lightness (L*) was higher, but redness (a*) was lower. In groups, I and III, L* was lower and a* was higher. Breast muscles contained more protein in groups I and II, more fat in groups I and III and more water in groups II and IV. The inclusion of vegetable protein alternatives to SBM in duck diets provided the best results in birds fed with YL and RSM (ratio of 1:0:31 in starter and 1:0.81 in grower).

The objective of the study was to evaluate the effects of expanded diets on growth performance, meat quality, and carcass characteristics in finishing pigs. A total of 80 finishing pigs [(Landrace × Yorkshire) × Duroc] were randomly allotted to two dietary treatments: 1) unexpanded corn-soybean meal diets; 2) expanded corn-soybean meal diets. Each treatment consisted of ten replicate pens with four pigs (2 gilts and 2 barrows) per pen. There were no differences in daily feed intake and daily gain throughout the experiment (P less than 0.05). However, expanded diets decreased feed conversion ratio compared with unexpanded diets (P less than 0.05). Expanded diets had no effect on carcass characteristics and meat quality with the exception of increased sensory evaluation (color) of meat compared with unexpanded diets (P less than 0.05). In conclusion, expanded diets can improve feed conversion ratio but have no effect on daily gain and daily feed intake and sensory evaluation of meat color.

Thirty-six boars and 36 barrows were fed four diets. The control was a fortified corn-soybean meal diet. Diets 50 L and 100 L were lysine-supplemented, and 48% and 95%, respectively, of the corn and soybean meal were replaced by Tibor naked oats. Diet 100 (unsupplemented) contained 95% naked oats. The diets were pelleted and given ad libitum to pigs housed three per pen. At a slaughter liveweight of approximately 90 kg, the left side of the carcass was used for carcass and meat quality examinations and samples were taken for fatty acid (FA) analysis. Additionally, 24 boars and 24 barrows were fed the four diets in a metabolism trial to determine metabolizable energy and nitrogen values. Daily gain by pigs fed Diet 100 was less (P < 0.01), and their times to market weight were 10 and 8 d longer, respectively, than pigs fed Diets 50 L and 100 L. Boars ate significantly less feed daily than barrows, and the rate of gain for boars was less and feed efficiency higher than for barrows. Total yield of lean meat was less (P < 0.05) from Diet 100 pigs than from those fed the other diets. The carcass index was higher (P < 0.05) for boars (106) than for barrows (102). The FA profile for the Tibor naked oats was very similar to that reported in a previous study even though the two crops were grown on different farms and 1 yr apart. Naked oats increased significantly the concentration of 18:1n–9 and 20:1 in the carcass backfat, but did not influence the quality of the loin muscle fat. An increased (P < 0.05) intensity of flavor in the pork loin roasts was associated with the naked oats diets. Boar roasts scored higher (P < 0.05) for juiciness than those from barrows; there was no difference in boar taint between the two sexes. The metabolizable energy value of the control diet was higher than those of the oats diets; significantly higher when corrected for N retained. Pigs fed Diet 100 L retained (P < 0.05) the most N (18.7 g d−1) and Diet 100 the least (15.8 g d−1). Nitrogen retention as a proportion of N intake was more (P < 0.05) for boars than for barrows. This study supported the inclusion of at least 48% naked oats in a diet for growing-finishing pigs. Key words: Boars, oats (naked), metabolism, carcass, fatty acids, meat quality

The objective of this study was to evaluate the efficacy of supplementing a corn-wheat-soybean meal-based diet with a multicarbohydrase and phytase complex (MCPC) on growth performance, apparent total tract digestibility (ATTD) of nutrients, carcass traits, and meat quality in growing-finishing pigs. A total of 300 pigs (Duroc × Large White × Landrace; body weight = 25.3 ± 0.7 kg) were randomly allotted to three groups with 10 replicates of 10 pigs each. Pigs from three groups were fed positive control (PC) or negative control (NC), without or with MCPC diets, respectively. The MCPC supplied at least 1800, 1244, 6600, and 1000 units of xylanase, β-glucanase, α-arabinofuranosidase, and phytase per kilogram of diet, respectively. The NC diet was the PC diet but reduced in net energy (NE), digestible amino acids (dig. AA), digestible P (dig. P), and Ca by 74 kcal/kg, 7.0%, 0.134, and 0.119 percentage points, respectively. The diets were fed in 4 growth phases based on body weight (BW): phase 1: 25–50 kg, phase 2: 50–75 kg, phase 3: 75–100 kg, and phase 4: 100–135 kg. Compared to the PC, the NC diet decreased (p < 0.05) body weight gain, feed intake, and(or) feed to gain ratio during the growing/finishing phases 1, 2, 3, and 4. It also reduced (p < 0.05) the ATTD of crude protein, crude fat, P, and Ca of pigs. MCPC supplementation improved (p < 0.05) the body weight gain, feed intake, and(or) feed to gain ratio in phases 2, 3, and 4 and the ATTD of crude protein, crude fat, ash, P, and Ca for the NC diet. Additionally, dietary treatment had no effects on carcass traits and meat quality with the exception that the loin eye area in the NC plus MCPC diet was higher (p < 0.05) than the NC diet. In conclusion, the addition of MCPC to a corn-soybean meal-wheat-based diet reduced in energy and nutrients improved the growth performance and nutrient digestibility but had little effect on carcass traits and meat quality in growing-finishing pigs.

An experiment was conducted to evaluate the effect of pea-based diet fed to growing and finishing pigs on performance, carcass and meat quality. Thirty pigs (Slovak White Meaty or crossbred Slovak White Meaty &times; Pietrain) were tested for the malignant hyperthermia (MH) syndrome using a DNA based test. Pigs were allotted to control and experimental groups (of 10 pigs each, equal for normal &ndash; NN and he-terozygotes &ndash; Nn and equal for barrows and gilts) with 2 pigs per pen. Pigs receiving the control treatment were fed soybean meal diets. In all diets fed to experimental pigs the soybean meal was replaced by 30% of raw or extruded pea-based meal balanced on an isonitrogenous and isoenergetic level. Pig performance was monitored for the entire experimental period. At the conclusion of the experiment, carcass and meat quality were measured. The results did not show any effects of dietary treatments on average daily gain (P &gt; 0.05). The evaluation of carcass composition showed no significant differences (P &gt; 0.05) in backfat and lean percentage values between the control and experimental pigs. Chemical composition (total water, protein, intramuscular fat) and fatty acid profile did not differ among treatments (P &gt; 0.05). The differences in the omega-6/omega-3 ratio were significant (P &gt; 0.05) between animals fed the control ration with soybean meal and animals receiving the pea ration. No differences were observed between control and experimental pigs in pH (45 min and 24 h), colour (24 h), drip loss (24 h) and tenderness (5 day) measured with Warner-Bratzler instrument (P &gt; 0.05). In conclusion, peas may replace the soybean meal in diets fed to growing and finishing pigs without negative influence on pig performance, carcass composition and meat quality.
