Non-pregnant beef heifers implanted with zeranol at birth and at 100 and 200 d of age were fed a finishing ration for 78 d to slaughter at 21–22 mo of age. Rate of fat deposition, grade fat and marbling score were less (P < 0.05) and carcass weight, rib-eye area and lean-meat yield were greater (P < 0.05) for implanted heifers than for non-implanted heifers. Heritabilities and correlations of Warner-Bratzler shear force (WBSF), marbling score (MS), hot carcass weight (HCW),12–13th rib-fat (FAT), and ribeye area (REA) were calculated from 3360 Angus-, Charolais-, Hereford-, and Simmental-sired cattle in the C attleman’s Beef Board Carcass Merit Project. The heritabilities (± SE) for WBSF, MS, HCW, FAT, and REA were 0.34 ± 0.25, 0.43 ± 0.28, 0.73 ± 0.35, 0.16 ± 0.19, and 0.56 ± 0.31 in Angus; 0.43 ± 0.22, 0.30 ± 0.18, 0.21 ± 0.16, 0.35 ± 0.20, and 0.23 ± 0.16 in Charolais; 0.12 ± 0.11, 0.55 ± 0.22, 0.20 ± 0.14, 0.25 ± 0.15 and 0.34 ± 0.17 in Hereford; and 0.16 ± 0.14, 0.44 ± 0.20, 0.45 ± 0.20, 0.23 ± 0.16, and 0.30 ± 0.18 in Simmental. The genetic correlations, averaged across analysis type, for WBSF-MS, WBSF-HCW, WBSF-FAT, WBSF-REA, MS-HCW, MS-FAT, MS-REA, HCW-FAT, HCW-REA, and FAT-REA were -0.17, 0.32, -0.23, 0.30, 0.10, -0.17, 0.39, -0.15, 0.68, and -0.86 in Angus; -0.42, 0.77, 0.52, -0.05, -0.44, -0.22, -0.19, 0.66, -0.05, and -0.24 in Charolais; -0.43, -0.04, -0.33, 0.09, 0.08, 0.79, -0.14, -0.26, 0.50, and -0.38 in Hereford; and 0.55, 0.08, 0.62, -0.08, 0.30, 0.61, -0.14, 0.06, 0.65, and -0.48 in Simmental. Objective: This study was conducted to determine early hereditary endowment to establish a short-term feeding program.Methods: Hanwoo steers (n = 140) were equally distributed into four groups (35/group) based on genetic meat yield index (MYI) viz. the greatest, great, low, and the lowest at Jukam Hanwoo farm, Goheung. All animals were fed in group pens (5 animals/pen) with similar feed depending on the growth stage. Rice straw was provided ad libitum, whereas concentrate was fed at 5.71 kg during the growing period (6 to 13 mo) and 9.4 kg during the fattening period (13 to 28 mo). Body weight (BW) was measured at two-month intervals, whereas carcass weight was determined at slaughtering at about 31 months of age. The Affymetrix Bovine Axiom Array 640K single nucleotide polymorphism (SNP) chip was used to determine the meat quantity-related gene in the blood.Results: After 6 months, the highest (p<0.05) BW was observed in the greatest MYI group (190.77 kg) and the lowest (p<0.05) in the lowest MYI group (173.51 kg). The great MYI group also showed significantly (p<0.05) higher BW than the lowest MYI group. After 16 and 24 months, the greatest MYI group had the highest BW gain (p<0.05) and were therefore slaughtered the earliest. Carcass weight was significantly (p<0.05) higher in the greatest and the great MYI groups followed by the low and the lowest MYI groups. Back-fat thickness in the greatest MYI group was highly correlated to carcass weight and marbling score. The SNP array analysis identified the carcass-weight related gene BTB-01280026 with an additive effect. The steers with the allele increasing carcass weight had heavier slaughter weight of about 12 kg.Conclusion: Genetic MYI is a potential tool for calf selection, which will reduce the slaughter age while simultaneously increasing carcass weight, back-fat thickness, and marbling score.

The association between visually assessed muscle scores on live steers and their carcasses, eye muscle area, and the yield of saleable and lean meat was determined on 156 steers of mixed breeds (mean carcass weight 282 kg, mean P8 fat depth 13 mm). The contribution of subcutaneous and intermuscular fat to differences in saleable meat yield was also investigated. There was a negative correlation between P8 fat depth and both live ( r = -0.21) and carcass muscle score (r. = -0.31); therefore, the assessors were not scoring fatter steers as having better shape. The correlation between live and carcass muscle scores was 0.79. The correlation between carcass muscle score and eye muscle area was 0.58. When live muscle score, carcass muscle score, or eye muscle area was included in regression models already containing weight and fat depth, there was a significant (P<0.001) increase in the amount of variation in saleable and lean meat yield explained by the models. At the same liveweight and fat depth, a change in live muscle score from C (moderately muscled) to B (well muscled) was accompanied by an increase of 1.7% in saleable meat and 2.2% in lean meat, when these were expressed as a percentage of carcass weight. The equivalent change in carcass muscle score in carcasses of the same weight and f a t depth was accompanied by an increase of 1.9% in saleable meat and 2.4% in lean meat. The increased weight of saleable meat was not due to an increase in the dissected fat content of the meat. Weight of subcutaneous fat decreased as muscle score increased (P<0.01). There was no significant association between the amount of intermuscular fat and either live or carcass muscle score (r. = -0.075 and -0.18, respectively).

Phenotypically dehorned (genetically horned) and polled bulls were similar for birth, weaning weight, pre- and post-weaning ADG, carcass weight, grade fat, marbling, rib-eye area, cutability and carcass grade. Polled bulls had higher (P < 0.02) fat over the rib-eye compared with dehorned. The similarity in growth and a majority of carcass traits between polled and horned, would suggest that breeding for polledness may be recommended to eliminate horns. Feding different physical forms of diets on performance and carcass traits of goats was studied. Thirty-six wethers were fed total mixed diets of either whole or rolled barley mixed with grass-alfalfa hay either chopped to 2.5 or 5 cm lengths. No differences (P > 0.05) in ADG (76.6 to 84.8 g d-1), feed intake (0.92 to 1.01 kg d-1), F:G (12.2 to 13.1 kg kg-1), hot carcass weight (13.5 to 14.1 kg), dressing %, (45.0 to 45.7%) and ribeye area (10.9 to 13.1 cm2) were observed among goats fed the four dietary combinations. Breed-of-dam and sex-of-calf effects are reported based on observation of 2007 heifer and steer carcasses. The carcasses were derived from Limousin-sired calves born to dams representing 15 F1 and backcross genotypes reared at two locations over a period of 5 yr. The calves represented Hereford × Angus, Charolais × Shorthorn, Simmental × Shorthorn and all backcross combinations involving Charolais or Simmental with Hereford, Angus or Shorthorn. Carcass traits were analyzed on an unadjusted, a constant hot-carcass weight, and a constant rib-fat depth basis. The slaughter criteria dictated that steers were heavier at slaughter than heifers. They also exhibited higher dressing yield, greater longissimus thoracis area, and lower fat depth. Charolais and Simmental breeding was associated with less rib fat depth, greater longissimus thoracis area, a higher proportion of preferred cuts, less dissectible fat, more bone and more lean in the preferred cuts than British beef breeding. Within the European (Charolais and Simmental) and British beef (Hereford, Angus and Shorthorn) breed groups, breed effects were smaller, but for carcass composition traits they were frequently significant. When compared with Simmental, Charolais breeding tended to be associated with less marbling, less rib fat depth, less dissectible fat and more lean in the preferred cuts. Among the British beef breeds, Hereford was associated with the highest proportion of preferred cuts, Shorthorn with the lowest rib fat depth — but the highest dissectible fat — and Angus with the most marbling, the greatest longissimus thoracis area and the lowest bone content. This research has demonstrated that breed effects for carcass composition traits tend to be additive and that a significant effect may be associated with substitution of as little as one-eighth of the breed composition. Marbling score was assessed in 20 437 Canadian beef carcasses on a 10-point scale (1 = very abundant, 10 = devoid) in six provinces during the period August to November 1989. Heifer carcasses had a lower marbling score (more marbling fat) than steer carcasses, and both had lower marbling scores (more marbling fat) than bull carcasses. Marbling increased as Canada grade changed from B1 to A1 and from A1 through to A4, indicating that marbling fat increased with carcass fatness. The regression of marbling score on carcass weight and carcass 12th rib fat thickness, although significant, showed that these traits only accounted for 0.5 and 6%, respectively, of the overall variation in marbling score. The overall distribution of marbling scores showed that 20.6% of carcasses had small or more marbling, 57.9% had slight marbling, 20.4% had traces of marbling and 1.1% were devoid of marbling. Pre-slaughter ultrasound and whole side dissection data from 47 crossbred bulls were used to assess (1) the relative value of six previously published equations based on live animal measurements, (2) the value of alternative pre-slaughter measurements, and (3) the value of alternative ultrasound probes as predictors of whole side lean meat yield. Analysis of absolute bias-corrected residuals indicated that all six previously published equations predicted whole side lean meat yield with similar accuracy (P = 0.62), but analysis of absolute rank residuals indicated that an equation originally based on carcass measurements tended (P = 0.17) to rank bulls less precisely than five ultrasound-based equations. Breed composition, age, liveweight, hip width, heart girth, and round muscle depths did not contribute to new lean meat yield prediction equations (P > 0.10), but height, 12th/13th rib body wall, rump fat, and gluteus medius muscle depths and marbling score did (P < 0.10). However, examination of absolute residuals and absolute rank residuals indicated that accuracy (P = 0.55) and precision (P = 0.64) did not improve significantly compared to equations based only on height, rib fat and longissimus muscle size. Similarly, analysis of absolute residuals and absolute rank residuals indicated that fat and longissimus muscle depth measurements collected with a short probe predicted whole side lean meat yield as accurately and precisely as measurements collected with a long probe. Results indicated that (1) equations based on live measurements may provide more precise predictions of lean meat yield than equations derived from carcass measurements, (2) supplementing ultrasonic rib fat and longissimus muscle measurements with additional ultrasound measurements did not improve the accuracy or precision of lean meat yield prediction, and (3) lean meat yield of yearling bulls can be accurately predicted using fat and longissimus muscle depth measurements collected with a short probe. Growth, efficiency and carcass traits were evaluated for goats fed barley or a concentrate mix (CM). Goats on the CM showed higher (P < 0.01) average daily gain (ADG) (27.5%), end of test weight (11.6%), hot carcass weight (HCW) (14.9%) and rib-eye area (REA) (14.7%), lower (P < 0.02) concentrate to gain ratio (CG) ratio (22.5%) and no differences (P > 0.05) in concentrate intake (CI) and dressing percent (DP), compared to those on barley. Although feeding the CM improved ADG, CG, HCW and REA, it may be relatively more economical to finish goats on whole barley grain. Key words: Goat, high energy, high protein, growth, rib-eye area

In 1984–1985 and 1985–1986 groups of 136 and 127 male calves were used to assess the effects of multiple implants (Ralgro and Steeroid), castration time (early and late) and castration method (surgical and chemical) on growth to weaning and feedlot performance and carcass characteristics. Ralgro increased calf rate of gain to weaning (P < 0.05) and adjusted weaning weight (P < 0.01) but did not affect rate of gain during the feedlot period. Although Ralgro increased (P < 0.001) weight at slaughter, it took longer (P < 0.05) for implanted cattle to reach Canada A1 than unimplanted cattle. Steeroid did not affect rate of gain to weaning but did increase (P < 0.05) adjusted weaning weight. Steeroid increased (P < 0.05) rate of gain relative to unimplanted cattle during the growing period in the feedlot and cattle implanted four times from birth to slaughter gained more (P < 0.05) than cattle implanted twice (birth and weaning). For the entire feedlot period, bulls receiving Steeroid gained faster (P < 0.05) than unimplanted bulls with no difference (P > 0.05) between implant groups (two or four implants). Ralgro implants increased (P < 0.05) carcass weight, rib-eye area and cutability while Steeroid increased (P < 0.05) only carcass weight. However, when rib-eye area was adjusted for carcass weight, the effect of Ralgro was not significant (P > 0.05). Bulls had greater (P < 0.05) shipping weight, carcass weight, rib-eye area, dressing percent and cutability than steers. Age at castration (early or late) had no effect on feedlot performance or carcass traits while method of castration (surgical or chemical) had some effects (P < 0.05) on ADG, liveweight, carcass weight and rib-eye area.
