Организация искусственного вскармливания детей включает использование специализированных продуктов детского питания. Основными принципами создания адаптированных детских молочных смесей является приближение их к составу и свойствам женского молока и соответствие особенностям пищеварения и метаболизма ребенка. Немаловажным моментом при этом является адаптация углеводного компонента. В современных формулах детских адаптированных смесей часть лактозы заменена на мальтодекстрин. Целью настоящих исследований являлось изучение пищевой ценности, показателей безопасности отечественного углеводного ингредиента мальтодекстрина и возможности его применения в специализированной пищевой продукции для детского питания. Результаты исследований органолептических, физико-химических и микробиологических показателей опытного образца мальтодекстрина подтвердили соответствие требованиям, предъявляемым к углеводным ингредиентам для производства продуктов детского питания. При исследовании возможности использования отечественного мальтодекстрина в производстве адаптированных продуктов детского питания подтверждена его целесообразность для оптимизации углеводного состава готового продукта. The organization of artificial feeding of children includes the use of specialized baby food products. The main principles of creating adapted infant formula are to approach the composition and properties of human milk and to match the characteristics of the child's digestion and metabolism. An important point in this case is the adaptation of the carbohydrate component. In modern formulas of children's adapted mixtures, part of the lactose is replaced with maltodextrin. The purpose of these studies was to study the nutritional value, safety indicators of the domestic carbohydrate ingredient-maltodextrin and the possibility of its use in specialized food products for baby food. The results of studies of the organoleptic, physico-chemical and microbiological parameters of the maltodextrin prototype confirmed compliance with the requirements for carbohydrate ingredients for the production of baby food. When studying the possibility of using domestic maltodextrin in the production of adapted baby products, its expediency for optimizing the carbohydrate composition of the finished product was confirmed.

Infant formula is an exclusive diet that offers the requisite nutrients for infants up to 6 months prior to the introduction of solids in their diet. Vegetable oils in infant formulas that serve as a source of fat could be contamination of monochloropropanediols (MCPD) and glycidol. The toxicity of MCPD and glycidol was highlighted in several studies implied health risk for exposed children, especially with their low body weight. This paper reviewed the occurrence of MCPD and glycidyl esters in infant formulas marketed in various countries, including risk assessment and associated estimated dietary exposure. From the selected studies published between 2015 to 2019, the presence of the contaminants was detected, but their concentrations decreased over the years indicating a low potential health risk to infants. These have been linked to the success of the vegetable oil producers' implementation of mitigation strategies. The paper also discusses the infant formula market in Malaysia, as well as the association of the use of palm oil in infant and follow-up formula in the Malaysian market. As one of the largest producers and exporters of palm oil and palm oil by-products, Malaysia is taking serious steps and the mitigation strategies it is exercising to reduce the level of MCPD and glycidol to comply with the regulation proposed by the European Commission. However, more studies are needed to gain a clearer view of the association between the use of palm oil in infant formulas and the occurrence of MCPD esters and glycidols, as well as their risk assessment.

The article analyzes the state registration of specialized food products, using the example of food products for children from three years old. The research process involves certificates issued on the website of the «Unified register of state registration certificates’ in the period from 2014 to 2019. During the analysis, the main groups of specialized baby food were identified, and the number of registered certificates in dynamics was determined. The data obtained indicate that the demand for state registration of children’s specialty food increased by 2018 and amounted to more than 30% compared to the previous period. The most popular products on the market of baby food for children three years old: juice-containing beverages, including vegetable raw materials, vegetable nectars, fruit juices.

Food allergies and allergen management are important problems of the public health and food industry. The idea of determining allergen concentrations in food ingredients and food products that are capable of causing severe allergic reactions is of great interest for regulatory bodies as well as consumer associations and the industry all over the world. In this connection, scientists proposed different approaches to determining the basis for assessment of severity of risks of food allergens for health of patients suffering from food allergy similar to methods of risk assessment for other hazards associated with food products (for example, chemical, microbiological). To assess risk of allergens, three different approaches were proposed: i) traditional risk assessment using the no observed adverse effect level (NOAEL)) and uncertainty factors; (ii) approach based on the benchmark dose (BMD)) and margin of exposure (MoE)); and (iii) probability models. These approaches can be used in risk management in food production and in the development of warning marking about the presence of allergens. The reliability of risk assessment will depend on a type, quality and quantity of data used for determining both population threshold levels (or threshold distributions) and an impact of an allergenic product/ingredient on a particular individual.
