TRENDS IN THE USE OF PACKAGING MATERIALS AND PACKAGING METHODS FOR PRODUCTS CONTAINING LABILE BIOLOGICALLY ACTIVE SUBSTANCES

При производстве качественной пищевой продукции особое внимание необходимо уделять ее упаковыванию и хранению. Витаминно-минеральные концентраты, используемые для приготовления пищевых продуктов и получения качественной безопасной продукции животноводства, содержат комплекс лабильных биологически активных веществ, для сохранности которых необходимо минимизировать окислительные процессы. Это обусловливает повышенные требования к упаковке таких продуктов. С целью выбора упаковочного материала и способа упаковки витаминно-минерального концентрата проведен тематический обзор публикаций отечественных и зарубежных ученых. Рассмотрены тенденции в области применения упаковочных материалов, указаны преимущества и недостатки биополимеров. На основе проведенного анализа установлено, что для упаковывания витаминно-минерального концентрата целесообразно в качестве материала упаковки использовать полимерные пленки, обладающие высокой свето- и газонепроницаемостью, позволяющей снизить скорость протекания окислительных процессов и, следовательно, сократить потери содержащихся в продукте лабильных биологически активных веществ. В качестве способа упаковки можно рекомендовать применять вакуумирование, обеспечивающее отсутствие кислорода воздуха в упаковке. When producing high-quality food products, special attention should be paid to their packaging and storage. Vitamin and mineral concentrates used for food preparation and production of high-quality safe livestock products contain a complex of labile biologically active substances, for the safety of which it is necessary to minimize oxidative processes. This leads to increased requirements for the packaging of such products. In order to select the material and method of packaging of vitamin and mineral concentrates, a thematic review of publications of domestic and foreign scientists was conducted. Trends in the use of packaging materials are considered, advantages and disadvantages of biopolymers are indicated. It was found that for packaging vitamin and mineral concentrate, polymer pellicle with high light and gas tightness, which allows reducing the rate of oxidative processes and, consequently, reducing the loss of labile biologically active substances contained in the product, should be used as a packaging material. Vacuuming, which ensures the absence of oxygen in the air in the package, can be recommended as a method of packaging.

Abstract At present, the preservation of the consumer properties of berry products is an urgent problem. Use of fresh garden strawberries is limited by a short storage period and seasonality. Under optimal storage conditions in a normal atmosphere, the average shelf life of strawberries is from 2 to 9 days depending on the variety. To meet the needs of the population in garden strawberries and meet the physiological needs in a unique complex of biologically active substances, strawberries are subjected to different processing methods. Drying being a type of fruit and berry products processing has the following advantages: a significant increase in the shelf life of products, a decrease in the mass and storage volumes of dried berries, preservation of minerals, carbohydrates, dietary fiber, antioxidants, bioflavonoids and many biologically active compounds in berries. Modern drying technologies allow preserving the content of essential vitamins to its full extent. Comparison of two technologies for drying garden strawberries has established that vitamins and other biologically active substances are well preserved in berries. Berries dried by convective vacuum-impulse method (CVI) are recommended to be used for food enrichment.

Microalgae are a group of autotrophic microorganisms that live in marine, freshwater and soil ecosystems and produce organic substances in the process of photosynthesis. Due to their high metabolic flexibility, adaptation to various cultivation conditions as well as the possibility of rapid growth, the number of studies on their use as a source of biologically valuable products is growing rapidly. Currently, integrated technologies for the cultivation of microalgae aiming to isolate various biologically active substances from biomass to increase the profitability of algae production are being sought. To implement this kind of development, the high productivity of industrial cultivation systems must be accompanied by the ability to control the biosynthesis of biologically valuable compounds in conditions of intensive culture growth. The review considers the main factors (temperature, pH, component composition, etc.) that affect the biomass growth process and the biologically active substance synthesis in microalgae. The advantages and disadvantages of existing cultivation methods are outlined. An analysis of various methods for the isolation and overproduction of the main biologically active substances of microalgae (proteins, lipids, polysaccharides, pigments and vitamins) is presented and new technologies and approaches aimed at using microalgae as promising ingredients in value-added products are considered.

Three types of monofloral honey (rapeseed honey, buckwheat and lavender) from the Republic of Moldova were analyzed. The results of the palynological analysis showed that the samples had a dominant type of pollen (at least 45%). In the case of lavender honey, the pollen of the plant Lavandula angustifolia is present in an average value of 74.83 ± 0.3; in rapeseed honey - Brassica napus and for buckwheat honey -Fagopyrum esculentum in average values as follows: 56.07 ± 0.3 and 68.08 ± 0.2% respectively. The study of the content of biologically active substances showed that buckwheat honey is the richest in polyphenols (9.00 ± 0.11 mg gallic acid / kg) and carotenoids (4.24 ± 0.57 mg βcarotE / kg), and maximum content of flavonoids is in rapeseed honey (4.52 ± 0.28 mg catechin / kg). Thus, the obtained results confirm that the honey from the Republic of Moldova falls within the limits recommended by the international regulation assuming adequate working conditions, handling, collection and storage of honey by beekeepers from the Republic of Moldova.

The article considers the species of fur animals bred in Ukraine. The volumes of fur production and the number of animal farms in the world and Ukraine are analyzed, of which Denmark, China and Poland are in the top three. The share in the total volume of fur production in Ukraine is only 1%. Domestic enterprises for breeding fur animals, which keep about 700 thousand minks in industrial conditions, are considered.The structure of the gastrointestinal tract of carnivorous and herbivorous fur animals, their consumption of nutrients and biologically active substances in feed were analyzed. Features of feeding fur animals are determined by the seasonality of vital functions, which determines changes in metabolism and nutritional value of feed. The importance of access to fresh drinking water in the diets of carnivorous fur animals is considered.The necessity of production of compound feeds for fur animals, which meet the norms of feeding and restrictions on the introduction of components, is substantiated.The need of fur-bearing animals in nutrients and biologically active substances for the production of high-quality nutritious compound feeds, for obtaining high-quality shine and density of fur, better digestibility by the body is shown. The ratios of digestible nutrients in the diets of minks of domestic and Scandinavian breeds are given, the percentage of metabolic energy in different feeding periods is given. The low percentage of compound feed production for fur farming is substantiated.Types of compound feeds and their advantages are presented. Technological methods of production of compound feeds for fur animals such as extrusion, expansion and granulation with the introduction of fat into the press granulator are analyzed. Finished feed should be solid and have a granule size of 4.5… 5 mm for grinding cutters, with high nutritional properties and biological value, and improved sanitation. Thanks to modern technologies, harmful microflora is disinfected and shelf life is increased.The state of domestic feed mills for the production of quality feed for fur animals is analyzed. Thanks to the emergence of new recipes and compliance with feeding standards, the technology of compound feed production for fur farming is being improved.

Medicinal plants (Cotinus coggygria, Dactylorhiza maculata, Platanthera chlorantha) growing in various territories (Kaliningrad, Moscow, and Minsk regions) were the objects of research. This paper presents a study of the chemical composition of these plants. To analyze the qualitative and quantitative composition of biologically active substances, the method of high-performance liquid chromatography was used. Atomic absorption spectrometry was used to study the content of trace elements. The content of organic acids and vitamins was determined by capillary electrophoresis using the Kapel-105/105M capillary electrophoresis system with high negative polarity. Extracts of medicinal plants were obtained on a Soxhlet apparatus using 70% ethanol as an extractant. It was found that among the biologically active substances in the plants under discussion, hyperoside, rutin (C. coggygria), Ferulic acid and Gallic acid (D. maculata), triene hydrocarbon (3,7-Dimethyl-1,3,6-octatriene), unsaturated alcohol (3,7-Dimethyl-2,6-octadien-1-ol), and benzyl acetate (P. chlorantha) prevailed. Samples of these medicinal plants contained trace elements (phosphorus, potassium, calcium, sodium, magnesium, and sulfur) and many aliphatic organic acids (succinic acid, benzoic acid, fumaric acid, citric acid, oxalic acid, and tartaric acid). The largest amount of biologically active substances and secondary metabolites of the studied plants from the Eastern Baltic is associated with climatic and ecological differences from other regions. The composition of these plants determines the potential of their use in feed additives for livestock and poultry as part of measures to improve the quality of livestock products. The use of medicinal plants for the production of feed additives is relevant in terms of improving regional economies, as well as improving the quality of life and nation’s health by providing ecologically clean livestock products.

The article considers the benefits of growing salmon fish in ponds, pools, cages, as well as in lakes and reservoirs in comparison with natural conditions. The main countries producing salmon fish in the world are analyzed. The share in gross production in the world is about 48 %, and in Ukraine is about 7 %. The quality and nutritional value of salmon fish is confirmed by the high market price. The main countries producing salmon fish in the world are analyzed. The relevance of salmon fish breeding is substantiated, it allows for a relatively short period of time (up to 2 years) to obtain fish with a market weight of up to 3.0 kg The state of salmon cultivation in Ukraine is considered, about 1,500 tons of salmon are marketed annually. The need for the production of compound feeds for salmon fish in relation to natural feed is substantiated. Compound feed expenses per 1 kg of salmon fish mass increase in relation to wild fish feed expenses are presented. The need for salmon fishes for nutrients and biologically active substances for the manufacture of nutritious compound feeds, due to the production of high quality salmon, is presented. The types of compound feeds, their advantages and saving of feeding are presented. Technological methods for the production of compound feeds for salmon fish are analyzed, such as dry or wet granulation, extrusion, briquetting, compound feed production by knurling, microencapsulation of granules and paste-like compound feeds. Ready-made feed should be balanced, waterresistant, have reduced fragility, feed costs for fish growth should be minimal and have increased fish productivity. All types of feed should be completely eaten by fish, absorbed as much as possible, not secrete dyes, not lead to liver obesity, provide fish with a balanced amount of nutritious and biologically active substances. The state of domestic feed mills for the production of high-quality feed for salmon fish is analyzed. Because of it, in order to the advent of new recipes and methods of feeding, the technology for the production of animal feed for these fish species is being improved.

An important aspect in the pharmaceutical development of dental medicines is to provide them with a prolonged therapeutic effect while reducing the side effects of drug substances and the possibility of long-term use. This can be achieved by using active components of plant origin. Aim. To develop methods for analyzing biologically active substances in the composition of a new combined dental gel. Materials and methods. The study object was a dental gel containing “Phytodent” complex tincture (PJSC “CPP Chervona zirka”, Ukraine). Based on the analysis of the composition of the tincture it was proposed to carry out standardization by the amount of biologically active substances, namely flavonoids. Identification was carried out by TLC, while the quantitative determination by absorption spectrophotometry, the ultraviolet and visible method by the reaction with aluminum chloride using the standard method calculated with reference to rutin and the absorbance measurement at 406 nm. Results and discussion. As a result of the research, the methods for the analysis of flavonoids in the composition of the new combined gel have been developed. The spectrophotometric method developed is characterized by specificity, accuracy, precision and linearity with r = 0.9998. One of the important issues when using components of plant origin is their stability both during preparation and storage. Using the method developed the stability of flavonoids has been studied depending on pH changes of the carbomer-based dental gel. Conclusions. It has been determined that the methods developed are easily reproducible and allow to identifying and quantifying flavonoids in the dental gel. It has been found that a stable content of flavonoids is characteristic of the carbomer-based gel neutralized to pH values from 5.0 to 6.0.

Republic of Uzbekistan is a major producer of agricultural products. The production of vegetables, grapes, fruits and berries, melons and gourds are increasing every year. The total volume of their production is approximately up to 16200 thousand tons per year. The seeds of these crops make up from 2 to 10% of the mass of processed raw materials, which are sources of valuable biologically active substances. The main method of obtaining oil (from apricot kernel, grape and melon seeds) is cold pressing, i.e. pressing carried out at a temperature below 60°C. Such oil immediately goes from the category of ordinary to the category of medicinal. At present, in Uzbekistan, the processing of apricot kernels, grape and melons seeds with the aim of to obtain high-quality vegetable oil is carried out on low-tonnage technological lines by the method of cold pressing. However, this method of processing raw materials does not provide the maximum yield of valuable vegetable oil and nutrients. Residual oilcake is not processed to obtain biologically active substances. The use of extraction as a method of obtaining these substances is not practiced. Unlike other solvents such as butane, hexane has the advantage of being virtually harmless to the user in ethanol extraction. Unlike the so-called "CO2-extraction", the extraction with ethanol can be carried out without the use of expensive equipment and subject to the correct technological regulations; the obtained extract can be of a very high-quality spectrum.  A scientifically substantiated methodology for the engineering calculation of a plant for the extraction of ingredients from plant materials with a low capacity, operating on an ethanol solvent, has not been developed, which shows the relevance of the development and implementation of such equipment in production.
