Auswirkung der Fütterung auf die Qualität und anreicherung von Eiern mit funktionalen bestandteilen Eier stellen eine wertvolle Quelle von Proteinen, Fetten und Mikronährstoffen dar, die in der menschlichen Ernährung eine bedeutende Rolle spielen. Die Produktion und der Verbrauch von Eiern sind in den letzten Jahrzehnten weltweit gestiegen. Lange Zeit wurde der Eierkonsum mit ungünstigen Auswirkungen auf die menschliche Gesundheit in Verbindung gebracht, vorwiegend wegen seines Cholesteringehalts. Heutzutage ist aber bekannt, dass sich andere Faktoren (genetische Prädisposition, hormoneller Status, Ernährung, usw.) mehr auf die Cholesterinwerte im Serum auswirken als das Cholesterin aus Eiern. Lebensmittel, die heutzutage täglich verbraucht werden, dienen nicht nur dazu, den Körper mit den notwendigen Nährstoffen zu versorgen, sondern der Vorbeugung von Krankheiten, die mit der Ernährung in Verbindung gebracht werden (besserer immunologischer Status, geringeres Risiko für Herz- und Gefäßkrankheiten, Aufrechterhaltung des Sehvermögens, usw.). Anhand einer speziellen Technologie bei der Produktion von Konsumeiern besteht die Möglichkeit, den Anteil bestimmter Bestandteile wie Omega-3-Fettsäuren, Selen, Lutein, Zeaxanthin, Vitamin E und Vitamin A zu erhöhen. In dieser Arbeit wird ein kurzer Überblick über den Einfluss der Technologie bei der Produktion von Konsumeiern (Fütterung von Legehennen) auf die Qualität von Eiern und ihre Anreicherung mit funktionalen Bestandteilen dargestellt.

Pemanfaatan rumput laut sebagai bahan pangan telah dilakukan sejak jaman dahulu bahkan rumput laut disinyalir telah dikonsumsi sejak jaman manusia purba. Rumput laut umumnya bersifat edible (dapat dimakan). Tumbuhan laut ini kaya akan polisakarida, mineral esensial, vitamin serta protein, rendah kalori dan rendah lemak. Kadar polisakarida dalam rumput laut mencapai 4-76% dari berat keringnya. Terdapat sekitar 56 jenis mineral dan trace mineral dalam rumput laut. Kadar mineral dalam rumput laut 10-20 kali lebih tinggi daripada mineral dalam tumbuhan darat. Dalam rumput laut juga tersimpan vitamin A, B, C, dan D serta vitamin E. Rumput laut juga mengandung vitamin B12 yang umumnya ditemukan dalam hewan. Kadar protein pada rumput laut mencapai 10-40% sedangkan kadar lemak hanya berkisar 1-5% dari berat kering. Jenis lemak dalam rumput laut merupakan PUFA (polyunsaturated fatty acid) khususnya asam lemak omega-3 dan omega-6 yang terkonsentrasi dalam fraksi galaktolipid. Rumput laut telah dimanfaatkan secara tradisional oleh masyarakat Asia dalam pengobatan penyakit kanker, hati dan tiroid; meningkatkan fungsi imun tubuh; sebagai anti-bakteri serta anti-virus. Perlunya konsumsi rumput laut dalam menu sehari-hari cukup beralasan mengingat beragam substansi penting serta manfaatnya untuk menunjang dan melindungi kesehatan tubuh.

ABSTRACTBackground: The Covid-19 pandemic in Indonesia has been running since March 2020. Efforts to break the chain of transmission of the disease caused by the new SARS-CoV 2 coronavirus are by avoiding contact by practicing social & physical distancing and improving personal hygiene, and increase immunity or body defense against the corona virus.Purpose: This article discusses the role of macro nutrients and micronutrients that have the potential to increase immunity such as omega-3 fatty acids, several water soluble vitamins such as vitamin B6, vitamin C, as well as fat soluble vitamins such as vitamin A, vitamin D and vitamin E. as well as several minerals such as Fe, Zn, Se. The mechanisms of innate immunity and adaptive immunity that involve these nutrients will be discussed in depth, as well as how the cellular mechanism fights the corona virus.Discussion: The mechanism for the entry of the corona virus into the cell is through a mechanism called endocytosis, in which the virus is captured by the receptors on the surface of the cell, then drawn into the cell. Spike protein (protein S) facilitates the entry of viruses into target cells, especially lung cells.Conclusion The body's defense mechanisms against the corona virus are: 1) strengthening the body's frontline defenses or innate immunity; 2) stimulates the production of IgM and IgG immunoglobulins in the circulation; 3) blocking the virus from binding to the ACE-2 receptor; 4) reduce the intensity of cytokine storms; 5) reduce the speed of virus replication. ABSTRAKLatar Belakang: Pandemi Covid-19 di Indonesia telah berjalan sejak bulan Maret 2020. Upaya untuk memutus rantai penularan penyakit yang disebabkan oleh virus corona jenis baru SARS-CoV 2 adalah dengan menghidari kontak dengan cara mempraktekkan social & physical distancing dan meningkatkan kebersihan diri, serta meningkatkan imunitas atau pertahanan tubuh terhadap virus corona. Tujuan: Artikel ini membahas peran zat gizi makro dan zat gizi mikro yang berpotensi untuk meningkatkan imunitas seperti asam lemak omega-3, beberapa vitamin larut air seperti vitamin B6, vitamin C, juga vitamin larut lemak seperti vitamin A, vitamin D dan vitamin E, serta beberapa mineral seperti Fe, Zn, Se. Mekanisme innate immunity dan adaptive immunity yang melibatkan zat gizi tersebut akan dibahas secara mendalam, serta bagaimana mekanisme selular melawan virus corona. Ulasan: Mekanisme masuknya virus corona ke dalam sel adalah melalui mekanisme yang disebut endositosis, yaitu virus ditangkap oleh reseptor yang terdapat di permukaan sel, kemudian ditarik masuk ke dalam sel. Spike protein (protein S) bertugas memfasilitasi masuknya virus ke dalam sel target, terutama sel paru.Kesimpulan Mekanisme pertahanan tubuh melawan virus corona adalah: 1) menguatkan pertahanan tubuh garis depan atau innate immunity; 2) menstimulasi produksi immunoglobulin IgM dan IgG di dalam sirkulasi; 3) memblokir agar virus tidak terikat oleh receptor ACE-2; 4) menurunkan intensitas badai sitokin; 5) menurunkan kecepatan replikasi virus.

ZusammenfassungAcht eng verwandte Mitglieder einer Linie von Working Kelpies zeigten Symptome einer Dermatomyositis in Form von Alopezie, Krusten, Ulzerationen der Haut, Depigmentation von Nasenspiegel und Lefzen, Onychodystrophie und Muskelatrophie, vor allem der Kaumuskeln. Die Symptome waren bei den betroffenen Tieren unterschiedlich stark oder nur teilweise ausgeprägt. Die klinische Diagnose wurde bei drei Hunden durch histologische Untersuchung von Hautbioptaten, nicht jedoch Muskelbioptaten bestätigt. Therapeutisch kamen verschiedene immunmodulatorische Medikamente (Steroide, Ciclosporin, Mycophenolat-Mofetil, Pentoxifyllin, Doxycylin/Niacinamid, Omega-3-Fettsäuren, Vitamin E) mit unterschiedlichem Erfolg zum Einsatz. Bei der Dermatomyositis handelt es sich um eine immunvermittelte Erkrankung mit genetischem Hintergrund bei Mensch und Hund. Die verantwortlichen Gene sind weitgehend unbekannt. Für die Hunderassen Collie und Shetland Sheepdog besteht eine Prädisposition. Zudem wird eine familiäre Häufung beim Beauceron beschrieben. Da die Rasse Working Kelpie im 19. Jahrhundert aus schottischen Hunden des Collie-Typs entstanden ist, wäre eine genetische Prädisposition für die Dermatomyositis erklärbar.

AbstractIn the US farmers often market pastured poultry eggs for a premium price, claiming animal and human health benefits. We examined how moving pastured hens to forage legumes or mixed grasses influenced hen (Gallus gallusL.) egg omega-3 fatty acids and concentrations of vitamins A and E. We also compared the eggs of the pastured hens to those of hens fed a commercial diet in cages. We used a cross-over design to compare pasture species: 75 sister hens were assigned to one of three pasture treatment groups: (1) alfalfa (Medicago sativaL.), (2) red and white clover (Trifolium pretenseL. andTrifolium repensL.) or (3) mixed cool season grasses. Groups were rotated to all three pasture treatments, each for 2 weeks and supplemented with 70 g commercial hen mash bird−1day−1. Pasture botanical composition, forage mass, leaf to total ratio and plant fatty acid composition were compared among pasture treatments. Eggs of the pastured hens were compared to eggs of 50 sister hens that were fed only commercial hen mash in cages for the entire 6 weeks. Forage parameters varied somewhat, but did not explain plant linolenic acid variation. Seventeen of the 18 quantified egg fatty acids, and vitamin A concentrations did not (P<0.05) differ among the three pasture treatment groups. Eggs of the hens that foraged grasses had 23% more (P<0.0001) vitamin E than eggs of hens that foraged clover. Compared to eggs of the caged hens, pastured hens' eggs had twice as much vitamin E and long-chain omega-3 fats, 2.5-fold more total omega-3 fatty acids, and less than half the ratio of omega-6:omega-3 fatty acids (P<0.0001). Vitamin A concentration was 38% higher (P<0.05) in the pastured hens' eggs than in the caged hens' eggs, but total vitamin A per egg did not differ. At the end of the experiment, pastured hens weighed 14% less and averaged 15% lower hen-day egg production than caged birds (P<0.0001). Results suggest that grass pastures may enhance vitamin E in eggs of pastured hens more than clover, and pastured hens supplemented with commercial mash will produce eggs with significantly more vitamin E and total omega-3 fatty acids compared to eggs from caged hens fed only commercial hen mash. Pastured hens may have lower body weight and egg production than caged hens, unless they are supplemented adequately to meet their dietary energy and crude protein needs.

Abstract. Background: Elevated homocysteine levels and malnutrition are frequently detected in hemodialysis patients and are believed to exacerbate cardiovascular comorbidities. Omega-3 fatty acids have been postulated to lower homocysteine levels by up-regulating metabolic enzymes and improving substrate availability for homocysteine degradation. Additionally, it has been suggested that prevention of folate depletion by vitamin E consumption decreases homocysteine levels. However, data on the effect of omega-3 fatty acids and/or vitamin E on homocysteine levels and nutritional status have been inconclusive. Therefore, this study was planned to examine the effect of combined supplementation of fish oil, as a source of omega-3 fatty acids, with wheat germ oil, as a source of vitamin E, on homocysteine and nutritional indices in hemodialysis patients. Methods: This study was a randomized, double-blind, placebo-controlled trial. Forty-six hemodialysis patients were randomly assigned to two equally-sized groups; a supplemented group who received 3000 mg/day of fish oil [1053 mg omega-3 fatty acids] plus 300 mg/day of wheat germ oil [0.765 mg vitamin E], and a matched placebo group who received placebo capsules for 4 months. Serum homocysteine and different nutritional indices were measured before and after the intervention. Results: Twenty patients in each group completed the study. At the end of the study, there were no significant changes in homocysteine levels and in the nutritional indices neither in the supplemented nor in the placebo-control groups (p > 0.05). Conclusions: Fish oil and wheat germ oil combination did not produce significant effects on serum homocysteine levels and nutritional indices of hemodialysis patients.

This study aims to evaluate the influence of Vitamin A and E homologues toward acrylamide in equimolar asparagine-glucose model system. Vitamin A homologue as β-carotene (BC) and five Vitamin E homologues, i.e., α-tocopherol (AT), δ-tocopherol (DT), α-tocotrienol (ATT), γ-tocotrienol (GTT), and δ-tocotrienol (DTT), were tested at different concentrations (1 and 10 µmol) and subjected to heating at 160 °C for 20 min before acrylamide quantification. At lower concentrations (1 µmol; 431, 403, 411 ppm, respectively), AT, DT, and GTT significantly increase acrylamide. Except for DT, enhancing concentration to 10 µmol (5370, 4310, 4250, 3970, and 4110 ppm, respectively) caused significant acrylamide formation. From linear regression model, acrylamide concentration demonstrated significant depreciation over concentration increase in AT (Beta = −83.0, R2 = 0.652, p ≤ 0.05) and DT (Beta = −71.6, R2 = 0.930, p ≤ 0.05). This study indicates that different Vitamin A and E homologue concentrations could determine their functionality either as antioxidants or pro-oxidants.

Für eine genaue Diagnostik werden weitere Entzündungsparameter erhoben, darunter Anti-CCP, Antinukleäre Antikörper, Rheumafaktor-IgM, aber auch CRP und BSG. Neben der klassischen immunsuppressiven und antiphlogistischen Medikation bieten sich bewährte Mittel aus dem Fundus der orthomolekularen Therapie an, darunter Vitamin A, B12, C, D und E, Omega-3-Fettsäuren und Folsäure, aber auch pflanzliche Immunmodulatoren wie Brennnessel, Weihrauch und Teufelskralle.

Rationale: Cystic fibrosis (CF), caused by mutations in the cystic fibrosis transmembrane conductance regulator (CFTR) gene, leads to impaired pancreatic function and therefore reduced intestinal absorption of lipids and fat-soluble vitamins especially in patients with CF developing pancreatic insufficiency (PI). Previous studies showed that CFTR modulator therapy with lumacaftor-ivacaftor (LUM/IVA) in Phe508del-homozygous patients with CF results in improvement of pulmonary disease and thriving. However, the effects of LUM/IVA on plasma concentration of the lipid soluble vitamins A and E remain unknown. Objectives: To investigate the course of plasma vitamin A and E in patients with CF under LUM/IVA therapy. Methods: Data from annual follow-up examinations of patients with CF were obtained to assess clinical outcomes including pulmonary function status, body mass index (BMI), and clinical chemistry as well as fat-soluble vitamins in Phe508del-homozygous CF patients before initiation and during LUM/IVA therapy. Results: Patients with CF receiving LUM/IVA improved substantially, including improvement in pulmonary inflammation, associated with a decrease in blood immunoglobulin G (IgG) from 9.4 to 8.2 g/L after two years (p < 0.001). During the same time, plasma vitamin A increased significantly from 1.2 to 1.6 µmol/L (p < 0.05), however, levels above the upper limit of normal were not detected in any of the patients. In contrast, plasma vitamin E as vitamin E/cholesterol ratio decreased moderately over the same time from 6.2 to 5.5 µmol/L (p < 0.01). Conclusions: CFTR modulator therapy with LUM/IVA alters concentrations of vitamins A and vitamin E in plasma. The increase of vitamin A must be monitored critically to avoid hypervitaminosis A in patients with CF.
