The observational checklist was set up with 3 points for qualifying the norm, 2 point for partially qualifying and 1 point for not qualifying. The minimum and maximum possible score of the sanitation survey was between 67-201.The establishments were given grades on the basis of obtained scores : Exemplar (A+Grade)=89.1-100%, Compliance (A Grade)=81-89%, Needs Improvement (B Grade)=72-80.9% and No Grade=<71.9%. Descriptive analysis was done using MS Excel and SPSS Software Version 21. Results: The mean sanitation survey score of 24 catering establishment was 135.41±17.19 with a median and mode of 133 and 132respectively.The establishments lowest and maximum score ranged between 101-177. Only 8% (2) of the catering establishments had provided uniform to 100% staff members, 84.0% (16 ) failed to provide adequate hand washing facilities. Salmonella contamination of pooled raw shelled egg mix (RSEM) used as an ingredient in lightly cooked or uncooked foods and high-risk kitchen hygiene practices in United Kingdom food service establishments using RSEM were investigated. Samples were collected from 934 premises. Salmonella was found in 1 (0.13%) of 764 RSEM samples, 2 (0.3%) of 726 samples from surfaces where ready-to-eat foods were prepared, and 7 (1.3%) of 550 cleaning cloths. Poor RSEM storage and handling practices were highlighted. Workers in 40% of the premises sampled failed to use designated utensils when RSEM was added to other ingredients, workers in 17% of the premises did not clean surfaces and utensils thoroughly after use with RSEM and before preparing other foods, only 42% of workers washed and dried their hands after handling eggs or RSEM, workers in 41% of the premises did not store RSEM at refrigeration temperature before use, and workers in 8% of the premises added RSEM to cooked rice at the end of cooking when preparing egg fried rice. Take-away premises, especially those serving Chinese cuisine, were least likely to have a documented food safety management system and awareness of the key food safety points concerning the use of RSEM compared with other food service premises (P < 0.0001). Food service businesses using RSEM must be aware of the continuing hazard from Salmonella, must adopt appropriate control measures, and must follow advice provided by national food agencies to reduce the risk of Salmonella infection.

In their diversity as raw materials and technology of production, sauces are a potential source of health problems. During their production, primary and secondary contamination with microorganisms and other physical or chemical contaminants is possible. Ineffective internal control is a prerequisite for the emergence of health problems among consumers. The subject of the study is а sauce manufacturer. An algorithm was designed to perform the audit and for the purposes of the. The prerequisite measures were placed in separate Good Hygiene Practices (GHP) and Good Manufacturing Practices (GMP) programs and in the technological documentation for all the sauces produced, with plans, procedures, orders, instructions, lists, registers and other documents, all closely related to the specifics of production. The technological documentation was found to be in agreement with the Food Safety Management System – the HACCP-plan. The technological documentation, which is part of the prerequisite measures, corresponded to its purpose and, with slight adjustments, is a good basis for the effective functioning of the Food Safety Management System. The conclusions contain specific recommendations for revision of the Internal Control System, including correction of elements of health and hygiene importance.

Dragon fruit passes through several processes from harvesting, hauling, sorting, packaging, storage, distribution, and marketing to the final consumer. With the many processes passed on the dragon fruit supply chain, it is necessary to analyze the cost structure and break even point. This study aims to analyze the cost and break even structure of each entity involved in the dragon fruit supply chain in Kabupaten Tanah Laut. All retailers selling dragon fruits are listed on the basis of their business capacity, then divided into groups. The next supply chain search is determined by the snowball sampling technique in which the other entity is determined on the basis of information from the merchant retailer from the research location. Data analysis method used is descriptive analysis and quantitative analysis. Quantitative analysis is used to analyze data in the form of basic cost in each entity. The results showed that the contribution of fixed costs was very large on the cost of principal and it was strongly influenced by the purchase price of the average dragon fruit. Sales at each entity have exceeded their break-even point. It shows that all entities receive benefit in marketing dragon fruit.
