Technology to produce canned vegetables based on unconventional raw materials

Разработана технология производства овощного пюре из корнеклубней якона, успешно интродуцированного в Республику Северная Осетия - Алания. Изучая химические показатели корнеклубней якона, установлено, что они отличаются богатым химическим составом и содержат сухих веществ - 11,9 %, протеина - 1,88 %, жира - 0,21 %, клетчатки - 1,06 %, золы - 1,48 %, безазотистых экстрактивных веществ - 9,0 %, инулина - 9,0 %, кислотность - 0,22 %. Якон имеет богатый минеральный состав. В 1 кг корнеклубней якона содержится кальция - 0,4 г, фосфора - 0,3 г, железа - 56,1 мг, меди - 0,57 мг, цинка - 3,0 мг, марганца - 12,6 мг, кобальта - 0,03 мг, йода - 0,01 мг, селена - 0,041 мг. Установлено, что в пюре из якона содержание сухих веществ составляет 15,0 %, что соответствует стандартам, содержание жира достигает 4,5 %, а минеральных примесей - 0,003 %. Растительные и посторонние примеси не обнаружены. По внешнему виду пюре из корнеклубней якона представляет собой однородную пюреобразную массу. Запах пюре фруктовый, без постороннего запаха. Вкус сладковатый, полный, насыщенный с приятным послевкусием, без постороннего вкуса. Цвет пюре однородный по всей массе: от желтого до светло-коричневого. Потемнение поверхностного слоя отсутствует. Особую ценность якону придает наличие в его составе инулина - природного полисахарида, на 95% состоящего из фруктозы, что позволяет корневые клубни якона и полученный продукт из него - пюре - рекомендовать как диетический продукт, в том числе людям, страдающим сахарным диабетом и ожирением. Установлено, что целесообразно использовать корневые клубни якона для производства овощного пюре. Пюре из корнеклубней якона по физико-химическим и органолептическим показателям соответствует требованиям стандартов. A technology to produce yacon pips-besed mashed vegetables successfully introduced to the Republic of North Ossetia - Alania is developed. Studying the chemical parameters of yacon pips, it was found that they differ in rich chemical composition and contain dry matter - 11.9 %, protein - 1.88 %, fat - 0.21 %, fiber - 1.06 %, ash - 1.48 %, nitrogen-free extractives - 9.0 %, inulin - 9.0 %, acidity - 0.22 %. It was found that mashed yacon contains 15.0 % of dry matter, which meets standards, the fat content reaches 4.5 %, and mineral admixtures - 0.003 %. No plant or extraneous matter was detected. In appearance, the yacon pips-based mash is a homogeneous, mash-like mass. The mash smell is fruity, free of any foreign smell. The taste is sweet, full, rich, with a pleasant aftertaste, free of foreign taste. The color of the mash is homogeneous throughout the whole mass from yellow to light brown. There is no darkening of the surface layer. The special value of yacon is due to inulin in its composition - natural polysaccharide, consists of 95 % fructose, which allows the yacon pips and the resulting product - mash, to be recommended as a dietary product, including people suffering from diabetes and obesity. It was found that it is advisable to use yacon pips for the production of mashed vegetables. Yacon pips-based mash meets standards in physico-chemical and organoleptic parameters.

For the production of high quality silage, and reduction of losses of biological yield, the use of effective biological preparations is topical. In order to reveal the effectiveness of the preservation of nutrients from plant raw materials, a number of laboratory studies were carried out in 2016-2017 in the Tatar Scientific Research Institute of Agriculture (TatNIISKh). The object of research was haylage harvested from the green mass of alfalfa, grown on the experimental field “TatNIISh” in Laishevsky district of the Republic of Tatarstan. The nutritional value of the conserved green mass of the alfalfa (Medicago sativa) variety Aisleau in the phase of budding with different moisture was analyzed. Preservation of the planted plant mass was carried out using biological preparations Biotrof (St. Petersburg), Ferbak-Sil (Kazan), Bioamid-3 (Saratov). The variant with biological preparation Biotroph served as the control. The maximum content of exchange energy (EE), with an increased concentration of phytomass moisture, was established in the control sample, which was 2.36 MJ/kg and was higher than the experimental samples with Bioamid-3 and Ferbak-Sil preparations at 6.78 and 3.82 %. With an increased dry matter content in the green mass of alfalfa, this indicator was the maximum in the sample with the preparation Bioamid-3 (3.67 MJ/kg), which was higher than the control by 4.56%. The leader in the concentration of crude protein and crude fiber, with a high moisture content of raw materials, was set in a control sample and amounted to 6.11 and 6.07%, which were higher than the prototypes with Bioamid-3 and Ferbak-Sil preservatives by 0.33 and 0.16%, 0.76 and 0.48% respectively. The leading preservative for the preservation of raw protein and crude fiber, with reduced moisture content of raw materials, showed the drug Bioamid-3, whose indices were above the control by 0.39 and 0.23%.

Chemical composition of seeds of C. maxima D. and C. pepo L. cultivated in the Republic of Macedonia and physico-chemical characteristics, fatty acid profiles, and sterol and tocopherol contents in pumpkin seed extracts were determined. Higher kernel yield and content of moisture, ash, total nitrogen, proteins and carbohydrates were measured in the C. pepo than in C. maxima seed. The highest extract yield of 487.4 g/kg dry matter was obtained from C. pepo kernel, while 388.2 g/kg dry matter was extracted from C. maxima kernel, when n-hexane was used as solvent. In all extracts, the palmitic, stearic, oleic and linoleic acids were predominant. The linoleic/oleic acid ratio was higher in C. maxima extracts. D7-Sterols were predominant in all extracts, while D5-sterols content was higher in the whole seed than in the kernel extracts. Higher tocopherol content was determined in the extracts of C. pepo whole seed and kernel (153.79 mg/kg and 117.81 mg/kg, respectively), than in those of C. maxima (121.24 mg/kg and 117.55 mg/kg, respectively). In all extracts γ-tocopherol content was higher than α-tocopherol.

Currently, it is necessary to search for non-traditional sources of plant raw materials characterized by a high content of indigestible polysaccharides having a beneficial effect on human body functions. One of the rich sources of high-molecular carbohydrates is the chickling vetch valves. The use of a new type of raw material in food production will expand the range of functional food products. The technology of powder from chickling vetch valves is developed, its organoleptic quality indicators are determined and the period of storage in warehouse premises is set. Based on the results of the study of the chemical composition of the powder, it was found that it is a valuable source of fiber, lignin, hemicellulose and pectin substances. It was found that when the powder is introduced into the recipe of biscuits in the amount of 1.1-2.2 % by weight of flour, the best organoleptic and physico-chemical quality indicators of finished products are achieved. It was found that when consuming 100 g of the developed products, the human body’s need for dietary fiber is met by 18.3-23.2 %.

The questions of spatial development as a modernization driver (the Kazakhstan case) are considered in this article. The analysis of the regional economic differences makes possible to work out the development guidelines, based on the advantages combination of the basic goods specialization and the policy of transferring growth impulses from the raw materials sector to the industry and service ones. Current challenges and opportunities, which face the Kazakhstan economy, the questions of economic diversification drive up the importance of the connection between spatial development and the cluster priorities. The analytical scheme of macro-regions and diversification through the dynamic focal networks can settle up these challenges.

The increasing need for herbal medicines requires the study of not only biological resources of medical plants, but also methods for their reproduction. Of special value are the medicinal plants that have a long history of success in traditional medicine. One of such plants is Eucommia ulmoides Oliv., which belongs to a rare relict species growing in natural conditions, for the most part, in the undergrowth of humid subtropical forests in China, mainly in the middle course of the Yangtze river. E. ulmoides compares favorably with most subtropical plants owing to its significant frost resistance, which makes it possible to cultivate it outside the humid subtropics. It has been widely introduced in Krasnodar Krai and in the Republic of Adygea (Russia) since the mid-20th century and successfully adapted to various environmental conditions in the Northwest Caucasus. The increasing demand for E. ulmoides bark can only be satisfied by laying out industrial plantations. However, the difficulties encountered in the traditional seed reproduction of E. ulmoides (dioecious species, pollen low quality, parthenocarpy, prolonged seed dormancy, irregular fruiting, long juvenile period, etc.) make scientists turn to modern biotechnological methods of plant propagation. While considering cultivation of planting material, we should focus on highly efficient methods that ensure stable and mass reproduction of the plants under study. An important role is played here by in vitro plant regeneration. The effectiveness of biotechnology methods is due to a reduction in timing of obtaining a large number of vegetative progeny of plants difficult for propagation, as well saving of the area required for their cultivation. The conditions for producing an aseptic culture of E. ulmoides were chosen based on the results of the studies. The highest degree of sterilization of E. ulmoides shoot segments was achieved when the explants were sequentially immersed first in 70 % ethanol (30 s) and then in 0.1 % mercuric chloride solution (5 min). With such a sterilization procedure, 63.3 % of the studied cuttings were made sterile, and 56.7 % of them proved to be viable. The optimal composition of the nutrient medium for regeneration of E. ulmoides microshoots has been determined: MS medium complemented with 1 mg/L 6-Benzylaminopurine (BAP) + 0.2 mg/L 1-Naphthaleneacetic acid (NAA). The best media for explant rooting are the following: 2/3 MS + 1.5 mg/L NAA + 30 g sucrose + 7 g agar; 2/3 MS + 1 mg/L NAA + 0.4 mg/L IBA + 30 g sucrose + 7 g agar.

Background: Quality control and the standardization of herbal medicines involve steps like standard source and quality of raw materials, good manufacturing practices and adequate analytical screening. These practices play a vital role in guaranting the quality and stability of herbal preparations. Chandrashakaladi Vataka is an Ayurvedic herbal formulation mentioned to be beneficial in Kushtha. Till date no published data is available on its analytical profile. Aim: To develop the Pharmacognostical and Phyto-chemical profile of Chandrashakaladi Vataka. Material and Methods: Chandrashakaladi Vataka was prepared as per classical method and analytical findings were recorded. Samples were subjected to organoleptic analysis, physico-chemical analysis and HPTLC examination by optimizing the solvent systems. Results and Conclusions: Pharmacognostical profile of Chandrashakaladi Vataka was established. Loss on drying, Ash value, Acid insoluble extract, Methanol soluble extract, Chandrashakaladi Vataka was found within prescribed limits. HPTLC profile of Chandrashakaladi Vataka revealed 12 spots at 254 nm and 13 spots at 366 nm.

Analysis of the assortment of sedatives registered in the Republic of Uzbekistan showed that sedatives are represented on the pharmaceutical market of the country by such dosage forms as drops, solutions, tinctures, syrups, medicinal herbal raw materials, capsules and tablets. Considering that sedatives registered in the form of a substance, with the exception of the dry extract of Leoglycyrfl produced by “Uzkimyofarm”, there are practically no names of S.K. Islambekov in the Joint Stock Company. In this regard, we consider it expedient to create a new sedative medicinal product of herbal origin in the form of a substance and obtain dosage forms based on it.
