Abstract Black garlic is a type of heat-treated garlic for which the traditional process is extremely simple but it is very time-consuming, taking more than one month. The purpose of this research was to reduce the processing time of black garlic. A novel processing including soaking and freezing was applied for the pre-treatment of the garlic. The effects of two temperatures (60 and 80 °C) and two relative humidities (65 and 80% RH) were investigated to find the optimum conditions for black garlic production. The optimum conditions for black garlic production were pre-treatment using CaCl2 soaking followed by freezing before being further incubated at 80 °C and 80% RH for 1 week. This optimal condition produced black garlic with high antioxidant activity as 5,390 and 25,421 mg Trolox/100 g dry weight for DPPH and ABTS assays, respectively. However, the incubation process at 60 °C and 65% RH provided golden garlic with the highest S-allylcysteine (SAC) content by about 1,772 mg/100 g dry weight. This novel process shortened the processing time of black garlic by about four times and provided a new processed garlic product called “golden garlic”.

Food is any material or substance eaten or drunk to provide energy and nutrients for the body's growth, development, and maintenance. Food can be considered safe if it is free from all hazardous substances that can affect consumer health. Food safety issues can place a high burden of responsibility on traders, government bodies, and international organizations. This chapter covers the hazards, their types, foodborne diseases, and strategies to ensure food safety and quality. Different food quality and safety assurance programs are discussed as well like quality management systems, HACCP certification, ISO 9000 family, good manufacturing practices (GMP)/good hygiene practices (GHP), total quality management (TQM), good working practices (GWP), good lab practices (GLP), etc. Moreover, the role of some novel processing technologies is also focused on in this regard.

A new NMR-based method for the discrimination of olive oils of any grade from seed oils and mixtures thereof was developed with the aim of allowing the verification of olive oil authenticity. Ten seed oils and seven monovarietal and blended extra virgin olive oils were utilized to develop a principal component analysis (PCA) based analysis of 1H NMR spectra to rapidly and accurately determine the authenticity of olive oils. Another twenty-eight olive oils were utilized to test the principal component analysis (PCA) based analysis. Detection of seed oil adulteration levels as low as 5% v/v has been shown using simple one-dimensional proton spectra obtained using a 400 MHz NMR spectrometer equipped with a room temperature inverse probe. The combination of simple sample preparation, rapid sample analysis, novel processing parameters, and easily interpreted results, makes this method an easily accessible tool for olive oil fraud detection by substitution or dilution compared to other methods already published.

The consumer tendency towards convenient, minimally processed meat items has placed extreme pressure on processors to certify the safety of meat or meat products without compromising the quality of product and to meet consumer’s demand. This has prompted difficulties in creating and carrying out novel processing advancements, as the utilization of more up-to-date innovations may influence customer decisions and assessments of meat and meat products. Novel advances received by the fish and meat industries for controlling food-borne microbes of huge potential general wellbeing concern, gaps in the advancements, and the requirement for improving technologies that have been demonstrated to be effective in research settings or at the pilot scale shall be discussed. Novel preparing advancements in the meat industries warrant microbiological approval before being named as industrially suitable alternatives and authorizing infra-structural changes. This miniature review presents the novel techniques for the microbiological safety of meat products, including both thermal and non-thermal methods. These technologies are being successfully implemented and rationalized in subsisting processing surroundings.

Breast cancer, a major cause of morbidity and mortality in women, is highly dependent on angiogenesis for its growth and distant metastasis. Furthermore, new blood vessels in malignant tumors are structurally abnormal and different from benign. Imaging techniques that provide information regarding tumor microvasculature structures could aid cancer detection. This protocol is to advance the development and evaluate the performance of a quantitative 3D microvessel imaging technique to provide quantitative information of morphological features of tumor microvessel as new biomarker for differentiation of malignant and benign breast masses. Our team has developed a new 2D contrast-free ultrasound (US) microvessel imaging technique based on novel processing procedures for revealing and enhancing submillimeter size tumor microvessels and complemented this technique with novel quantification tools to quantify vessel morphology. The results of quantitative 2D-HDMI for differentiation of malignant and benign breast masses are promising; however, the 2D imaging method overlooks some important 3-dimensional (3D) morphological features, such as the connectivity of the blood microvessels, leading to under- or overestimation of these parameters. Here, we propose to advance the development of a new quantitative 3D High-Definition Microvascular Imaging (q3D-HDMI) to provide complementary diagnostic information to the conventional US. The new technique, q3D-HDMI, uses high frame rate ultrasound imaging and is based on novel processing and quantification procedures for 3D imaging to reveal and quantify microvessel morphology in tumor volume. In this protocol we evaluate the diagnostic performance of q3D-HDMI for characterization of breast masses in a population of pre-biopsy patients; correlate the results with pathology as the gold standard.We also compare q3D-HDMI and q2D-HDMI in differentiating malignant from benign breast lesions

Event-related potential (ERP) is a distinctive pattern of brain activity that is elicited by the brain’s sensitivity and cognition whereas P300 evoked potential changes in cognitive functions. Since P300 wave is a cognitive response across multiple brain channels correlated between the measured electroencephalogram (EEG) and deviant stimulus in a specific period, it requires a suitable signal processing application for interpretation. Moreover, multiple steps of data processing under neuroscience criteria make the P300 reflection difficult to analyze by common methods. Therefore, this study proposes the processing model for brainwave applications based on P300 peak signal detection in multiple brain channels. This study applies 64 channels ERP datasets throughout bandpass filter in fast Fourier transform (FFT) with the specific ranges of signal processing while ERP averaging is applied as a feature extraction method. Furthermore, the experimental metadata is applied with the filtered P300 peak signals in channel classification via a machine learning method, the Decision Tree. The experimental results indicate the accurate mental reflection of P300 evoked potential in different brain channels with high classification accuracy relying on the contrast condition throughout the original data source averaged across the individual electrodes.

Pestiviruses like bovine viral diarrhoea virus (BVDV) and classical swine fever virus (CSFV) belong to the family Flaviviridae. A special feature of the Flaviviridae is the importance of nonstructural (NS) proteins for both genome replication and virion morphogenesis. The NS2-3-4A region and its regulated processing by the NS2 autoprotease and the NS3/4A protease plays a central role in the pestiviral life cycle. We report the identification and characterization of a novel internal cleavage in BVDV NS2, which is mediated by the NS3/4A protease. Further mapping using the NS2 of BVDV-1 strain NCP7 showed that cleavage occurs between L188 and G189. This cleavage site represents a novel sequence motif recognized by the NS3/4A protease and is conserved between the pestivirus species A, B and D. Inhibition of this internal NS2 cleavage by mutating the cleavage site did not cause obvious effects on RNA replication or virion morphogenesis in cultured cell lines. Accordingly, this novel internal NS2 cleavage adds an additional layer to the already complex polyprotein processing of Pestiviruses and might further extend the repertoires of the multifunctional NS2. However, unravelling of the functional relevance of this novel processing event in NS2, therefore, awaits future in vivo studies.
